Hi friends! I hope you all got to sleep in and have a lazy morning like I did. I love weekends when I really have no plans to speak of and just get to hang out with my family. I just got back from a yoga class, so I am feeling quite refreshed and centered.
Usually when I make a meal plan, I will try to get some suggestions from the family. Sometimes they come up some good ideas, and some not so practical ones. My husband actually suggested these sandwiches. He told me to get something called “Steak-uums.” I have never heard of that so I was curious. Frozen meat slices? That can’t be good, right? Well, I looked at the ingredients list… just beef.
So I gave it a try! These sandwiches were delicious! They were super easy to make and perfect for a busy night!
Philly Cheese Steak
1 container of Steak- umms (6 slices)
1 onion thinly chopped
1 large container of slices mushrooms
2 sweet peppers- I used red
4 hoagie rolls
6 slices provolone cheese
2 tablespoons Worcestershire sauce
Cook your veggies down, at least 15 minutes.
Add in your Worcestershire sauce. Then add your beef. Mix well.
Slice open your rolls and add in the mixture to each one. Top with cheese. You could either broil or bake at 350 for about 10-15 minutes until the cheese is melted and the bread is toasted. We served with a side of curly fries and some corn. DELICIOUS!
Hey ya’ll! I hope you are having a lovely Saturday. The weather here is beautiful! The girls and I took the dog on a walk and I almost broke a sweat. So weird how last week there was snow and ice. This is winter in Georgia, so I will take all the pretty days I can.

Sunday- Something kind of like this… Tomato Garlic Linguine with Mozzarella and Chicken
Monday- Montery Chicken
Tuesday- Cheese and Garlic Tortellini with Salami and Veggies (cold pasta salad)- mommy meal and lunch leftovers
Wednesday- ??????? Clean Out the Fridge/Leftovers
Thursday- ?????? Clean Out the Fridge/Leftovers

Finally Friday!!!! So I mentioned in the last post that I was basically going to do a pantry raid to figure out what to make with my ground beef. That is what I did tonight! I basically made a homemade hamburger helper. There were some onions, which Becca picked out, but Katie declared them delicious and yummy. Here is how I made it…
1 pound ground beef
1 onion, chopped
1 container mushrooms, sliced or chopped
4 tablespoons flour
1/2 container of reduced salt beef broth
1 small can or tomato soup
1/2 small container of heavy cream
3 tablespoons Worcestershire sauce
1 box of Rotini pasta
1 mug pasta water
Boil pasta water.
Meanwhile, brown your beef, onions, and mushrooms. Do not drain.
Add your flour. Stir well, then add your beef broth and tomato soup. Stir well until it becomes thick.
When your pasta is aldente (chewy), add it to the sauce plus a cup full of pasta water, and the heavy cream.
Mix well until all incorporated.
Take off heat, mix well, and let sit for 5ish minutes and stir. This should be a perfect Hamburger Helper consistency.

Last night I asked the girls what they wanted for dinner. It was between something made with beef or tilapia. They chose this lovely recipe… We ate it with a side of macaroni. There was so much fish between the 3 of us, that I didn’t even bother with a veggie. Just like last time, we scarfed it down after a night of activities, so there is no picture evidence. So I found this picture that actually looks pretty close; the first time I made it with rosemary, but alas, it is winter and I don’t have any fresh.
Tomorrow is a lots of homework and a late cheer practice, so we might have to go out. Thursday is a night out with a SUPER close friend who the girls know as their Uncle and lots more homework and studying. Why does third grade have SO much homework? I have no idea about Friday. Maybe I will make a meatloaf or something new; I still have that beef in the freezer. Saturday is out with some old work friends, so hubby will have a date night with his little ladies. After that I have no idea! Have a great rest of the week!

Yesterday, I had some time to myself to do some laundry, clean, and go to the grocery store. My girlies came back from Nana and Papa’s house all safe and sound, so we snuggled and played for a bit. Then I cooked some of my famous enchiladas https://funfoodiefamily.com/2015/06/15/enchilada-night/ for my sweet friend and her daughter. The girls played while all the adults caught up. There were a lot of laughs and too many chips and desserts were consumed (Tostidos, apple pie, cherry strudel, and conversation hearts)!!!!
So today was all for sleeping in, cheer pictures for Becca (update asap- they took forever, but they were TOTES adorbs!), and being in my kitchen! I started to put stuff in cabinets, and it is a process. I am about halfway done. The hubby is going to be working on the pantry this week. I still have a lot of food and stuff in boxes. We are also planning to get a new kitchen table next week.
Tonight I made some sausage pepper pasta. It was super yummy and there were clean plates had by all!
Sausage Pepper Pasta
1 onion, sliced
2 sweet peppers, thinly sliced
1 small container of mushrooms
3 heads minced garlic
1 pound pasta- I used Ziti noodles
1 pound mild Italian sausage (ground or thinly sliced)
1 jar of your favorite red sauce, I used this…
Start boiling your water with plenty of salt.
Brown your sausage on high heat, about 10 minutes. Take it out of the pan.
Drop in your pasta.
Brown your veggies and garlic, about 10 more minutes. Mix sausage and sauce in with veggies.
Add the pasta to the sauce with a cup full of pasta water. Incorporate and cook a couple more minutes until warmed through. Top with cheese! Enjoy!
Happy Friday, ya’ll! The kids are having a slumber party with the grandparents on this cold rainy/snowy/icy Georgia night, so the hubby and I decided to spurge on a sushi date night. We don’t get to have these very often; the girls turn up their noses at sushi, and it can get a bit pricey. There are a ton of great sushi places here, but we decided on a casual place less that 5 miles away called the Mori House. We usually get a few plates to share; a couple of rolls and a few appetizers. Great drinks and food every time! Here is how we “rolled” tonight 😉

The rest of the evening? Cracking open a bottle of red and catching up on my DVR’d shows 😉 I get to sleep in tomorrow, so I am super excited to snuggle under the covers for a few extra hours of sleep!
Evening guys! Last night I had some leftovers from a steak and potato meal (made in my new kitchen!!!!) and some leftover egg drop soup. I really had no idea if this was going to work out, but it did. I chopped up the steak and veggies, mixed them with the egg drop soup, 2 beaten eggs, and lots of cheese. I cooked it in an oven safe pan until I could tell the eggs were setting on the sides, about 4 minutes. Then I put it in a 350 oven for about 10 minutes. It came out pretty yummy! I had some for breakfast today and shared the rest with some co-workers. Hoping to get in the kitchen this weekend…I have a lot of catching up to do!
FINALLY FRIDAY!!! Plus, it is a long weekend, so I am super stoked. My little ladies and I are having a girls’ day tomorrow, Pilates/Kids Yoga in the am, lunch, and movie time =) Dinner out with Daddy (maybe Mexican?) and if it is nice (not raining) I plan on taking the pup for a run. Sunday looks like it might be some sleeping in, Bodyflow, DVRing, working in the kitchen, and running. My dog is middle aged and getting too lazy and a bit fat, so I am going to whip his booty (and mine) in to shape 😉 I might be celebrating Martin Luther King’s birthday cooking my first meal in my new kitchen… We are SOOOOO close!
