Tomato Jam

Hey guys! At the farmer’s market Saturday, I bought a couple of pints of these beautiful cherry tomatoes with the idea of making this recipe. It does take a bit of time, but it is so worth it in the end!

Tomato Jam

Ingredients- 2 pints cherry or grape tomatoes, 1 tablespoon of bacon fat (about what it left over from making a pound of bacon), 2 leftover pieces of bacon crumbled, red wine (I eye-balled it, probably about a cup).

Directions- Cut tomatoes in half

Watch for tomato thieves. My pup loves tomatoes. He likes to steal them off the counter and eat them, so I have to put them pretty far back on the counter. 

Cook tomatoes in bacon fat. Add in your wine. I just basically poured it around the pan a few turns to eyeball the amount.

Cook down for about an hour, stirring every so often. I added the crumbled bacon toward the end, because why not?  I put my jam in a few little mason jars. I gifted one to the neighbor because she is totally awesome and let me steal some wine for the recipe. 

There are so many things that you can do with this. Top some crackers with cream cheese and tomato jam. Use it on a flatbread or pizza. Use as a dip for chips and crudites. Serve on toast or mix in eggs. Those are just a few suggestions. My favorite way is put directly in my mouth with a spoon and have a sip of red wine. Delicious!
