Bacon Wrapped Cheese Stuffed Meatloaf

Today was a day filled with CHEER. The boys didn’t win, but the cheerleaders poured their hearts on the field in support of their DAWGS nonetheless. Tonight, Becca and I poured our love, hearts, and lots of cheese and bacon in to this yummy dish! My little sous chef is catching the cooking bug…


1 small can of tomato sauce
1 egg
3/4 pound of bacon
2 teaspoons Worcestershire sauce
1 1/2 pounds of a mix of beef and pork
1/4 onion grated (juiced)
1.2 sleeve of saltines
½ teaspoon dried oregano
¼ teaspoon garlic powder
sea or kosher salt and fresh black pepper
5 mozzarella sticks (or equivalent of fresh or grated mozz. or any cheese)

Preheat the oven to 375. Spray a large casserole dish with non-stick spray.
In a large mixing bowl whisk the tomato sauce, egg and Worcestershire sauce together.
Add the meat, onion, crackers,and spices.
Use your hands to mix it together until well combined. DO NOT over mix.
Add the meat to the pan and form it into a flat loaf.
Lay the cheese it into the middle and carefully roll the meat over it
Use your hands to pat it together well and shape it into a loaf so the cheese is encased like a pretty meat log.
Wrap the meatloaf in bacon.
Bake 45 minutes. Let it set for 10 minutes before slicing.
