Evening guys! Tonight everyone did their own thing for dinner. I have been craving Indian food, but rather than order out, I made my own. No one else in the house will eat tofu, so I decided to do a vegetarian korma with the ingredients below. I didn’t actually end up using the kale, so now I have it for a different tofu dish I plan to make soon.
This was a one pan plan…I drained and cut up some extra firm tofu. I cooked it for a few minutes in a bit of olive oil. Then I added half the jar of sauce, a package of ready to serve rice, and a couple of handfuls of frozen veggies. I gently mixed all of them together. As soon as the veggies were heated through, the dish was done! I served with some warm butter pita, because I forgot to get Naan. Delicious!
