Pork Rib Roast

This pork loin rib roast is so delicious! It’s super juicy and has a wonderful crust on the outside. I made it on Sunday night, but it is easy enough to make on a weeknight. 3-4 lbs Pork Loin Rib Roast (4-5 bones)
½ tbs coarse salt
2 tbs chopped rosemary, thyme, and/or tarragon
4 cloves garlic minced
2 tbs olive oil
½ tsp freshly ground black pepper
Preheat the oven to 350 ºF.
  1. In a small bowl, mix the herbs, garlic, and oil
  2. Rub the mixture all over the pork loin.
  3. Brown each side in a cast iron skillet
  4. Place the roast straight in the oven and place an oven thermometer inside. The pork should cook until the internal temperature is 150 ºF.
  5. Take out the roast and cover (tent) the roast with a sheet of aluminum foil. Let rest for 15 minutes.
  6. Cut along the bone and serve with a your favorite sides; mac and cheese, mashed potatoes, etc.
