Tomato Braised Pork and Potatoes

Hey guys! It seems like forever since I have blogged. Today was game day, but I still managed to get a yummy meal on the table for dinner. I went to my youngest one’s game this week and then came home to help her do homework, clean the kitchen, and cook a yummy meal for everyone. My parents took the oldest to her game, and we they all came back, we ate! My husband is a pilot, and is out of town a lot. When he is not home, I try to get as much help as I can, no guilt. No shame.  No one can do this alone, and if you have figured out a way to do it all by yourself, congrats, but there is no medal for parenting.

Tomato Braised Pork and Potatoes

Ingredients

Boston Pork Butt (bone in, about 6 pounds)
1 container mushrooms, sliced
1 pound potatoes (I have half pound of red potatoes I cut in half and a half pound of fingerling potatoes I got from the Farmer’s Market)
2 small onions, diced
3 heads of garlic, minced
2 tablespoons tomato paste
3 tablespoons Worcestershire Sauce
1/2 cup red wine
2 cans diced tomatoes
1 can tomato sauce
1 small container of beef broth
salt, pepper, all spice seasoning (liberally season your pork on all sides)
Stir in all your tomatoes and sauce.

Directions

In a large dutch oven, brown your seasoned pork in a bit of oil- I used canola
Take out your meat and add in your onions, mushrooms, and garlic. Cook for a few minutes, then add in your tomato paste. Stir for a minute, then add in your wine and Worcestershire sauce. Cook down about 3 minutes. Then cover with beef broth and add in your potatoes. Put the beef back in and cook as long as you can 😉 I cooked mine on medium heat for about 5 hours.
