Hey guys! I hope everyone had a great holiday! The girls had a great day and we have been enjoying our lazy time out of school. Tonight I made these pork chops with some random veggies I needed to use up from the fridge (mushrooms, broccoli, and yellow potatoes, diced). It was super easy. I just doused every thing with salt and Mrs. Dash. I gave everything a good toss and put the pork on top of all the veggies on a sheet tray. Then I popped it in a 375 oven for about 40 minutes. When the pork came up to 145 internal temperature, I took them out of the oven and let it rest. The potatoes and broccoli still needed about 10 more minutes to tender. I added a side of steamed green beans for some extra veggie power.
