Hey guys! Tonight I was supposed to make an epic lamb dish with sauteed onions and apples, but the lamb had major freezer burn, so our Taco Tuesday turned in to Taco Monday. I am not mad at that… So I cooked up some ground beef for Rucks and Katie, made Becca a refried bean and cheese taco and took her to cheer practice, then made myself a pretty large taco salad with crumbled up corn taco shells and tortilla chips and all these veggie fixings…cheese, homeade guac (avacado, salt, lime juice), sour cream, taco sauce, corn salsa (corn, red onions, cilantro, lime juice, cotija cheese), iceberg lettuce, black beans, and tomatoes. SO GOOD!
