Happy weekend! Today was a homemade brunch with one of my besties. Veggie sausage, sunny side up eggs, fruit, yougurt, granola, and these delicious hashbrowns made in the waffle iron. This is a great idea, beacuase you can make a ton of individual crispy waffles. Great shortcut to peeling and shredding potatoes- defrosted frozen potatoes. They also have those Simply Potatoes in the dairy aisle that I have used in the past as well. I just spray both sides of the iron, add a bit of oil, salt, and pepper to the potaotes, and add depending on the size of your iron, add in enough potatoes to cover the bottom of the pan. Cook until the potatoes are done to your likeness, about 3 minutes. We all love crispy, so they go in a bit extra 😉 Delicous!
