Cast Iron Giant Pancake Cake

I wanted to try to make a giant fluffy pancake, and I did! Super easy! 2 cups of premade pancake batter. I always use Krusteaz or Bisquick. 2 cups 2% milk. 3 eggs. 3 tablespoons sugar. 2 tablespoons vanilla. 2 tablespoons butter. Blend together. I actually used a blender, but a hand or stand mixer should do the trick. Not by hand. Pour in a cast iron skillet and bake at 425 for 15-20 minutes. I did the toothpick cake trick to double check. Mine was perfect at about 18 minutes. When it came out, I brushed to top with more butter!

But today was SUPER EASY because I used Original Bisquick Pancake and Waffle Mix. I just followed the directions and added blueberries! Super easy and yummy πŸ˜‰

Smoked Wings

Over the summer, we purchased a backyard smoker. The hubby has had a lot of fun with it so far. Yesterday I went to the store and got some wings. I had the butcher separate the flats from the drums and take off the tips. I can do it myself, but, like, why? I dried them off and seasoned them heavily with salt and pepper. The hubby got the smoker ready and cooked them for about an hour.

We divided them in a set of 3. One set was plain for the girls, one set was for my Honey Siracha sauce, and one was for my Mango Sesame Sauce…

1 stick of butter, equal parts honey and sriracha (or any hot sauce), and a dash of Worcestershire. Taste to add more spice or sweetness depending on personal taste.
1 stick butter, 1/3 cup mango chipotle sauce (mine was from Fresh Market), and then I just added some sesame oil, teriyaki sauce, hoisin, siracha, and fish sauce. I didn’t really measure. I just added a little at a time until I got what I wanted πŸ˜‰
We coated the wings in the sauce, then cooked for another 20 minutes on the grill.
