The Kitchen is Closed

Hey guys! Super busy week! Sorry I haven’t checked in for a while, but I have decreed our kitchen to be closed! This week it is all about the microwave, toaster oven, fast heat-ups, and take-out. Here are some of the eats we have been enjoying this week so far…

Also, picture a rotisserie chicken with leftover mac and cheese, lots of sliced cheese with our crackers, and a few peanut butter and jelly sandwiches. =) The girls are trying to talk me in to Zaxby’s for tomorrow; I may do Indian for me =) Be back next week with some new recipes. It is nice to take a break from the kitchen every once in a while!

Reflections on a New Year

2015…I wanted to make a New Year post. I am sitting here trying to figure out what to say. I know most people say it is a new year and a fresh start. Many resolve to eat better, workout more, spend less money etc. To me it feels just like another day. It always has. BUT this time there is a bit of a difference.

Our 2015 will be a “fresh start” and a “new beginning.” Our family trying to make sense of a normal world. One that doesn’t revolve around hospitals, doctor appointments, and taking care of a sick kid. Our girls have never known any other way, really. Even when times were good and “normal” these last 5 years, they were still not really…

Little things most people don’t even think of. Going places that normal kids and families go to…the library, pool, movies, jumpy places, picnics, vacations etc; learning to ride a bike, roller skating, bowling, etc. Heck, even going out to eat was a pretty big deal!

So for us in 2015, for our new family of four, we will make our lives count. That is our resolution. We will go places; we will do things. We will create our new normal. I will read books (not just middle school novels and cookbooks). I will go to the gym; I will take new and exciting fitness classes. I will take Brutus on runs in the park while the girls ride their bikes/scooters. We will go on trips; camping, skiing, Disney World, beach, etc. We will redo our bathrooms and kitchen to make them awesome. We will go to new restaurants. I will get back in the kitchen and make some damn delicious food. We will live and make our lives count. =) Amy

Hey guys! I am missing my kitchen. I am so appreciative for all my friends who have delivered meals to us in a time that just sucks. BUT, I am really missing my kitchen and cooking meals for my family. Bought a few cookbooks; researching some new food ideas and getting lots of inspiration for the new year. Lizzie’s Legacy

Not sure if all my followers know. We lost our sweet Lizzie this week. She has been suffering from Neuroblastoma, a childhood Cancer, for 5 years. Recently, she has been in bad shape and suffering. She went peacefully surrounded by her sisters and her daddy and me. We read her a book, gave her lots of kisses and hugs, and sent her off with a large celebration filled with hullahooping, bean bag tossing, arts and crafts, pictures, music, and of course, lots of food. Over 300 family and friends came and rejoiced in her honer. It was glorious and the perfect way to celebrate such an amazing girl who touched so many lives with her smile and bravery.

Not a lot of food will be posted here in the next few weeks.

Mario Batali says, “The best meal I’ve ever had is one some one else cooked.” I thank all those who have and will be bringing me dinners. You guys rock , and we can’t thank you enough.
