Weekly Meal Plan

Teenagers. Am I right? I have an 8th grader and a 10th grader. Tennis practice and cheer practice. Lots of work stuff happening with the parents ๐Ÿ™‚ But we are trying to eat at home more often together to connect. No phones or head phones. We talk and eat. We recently have finished โ€œThe Good Placeโ€ together as a family, which we watched after the girls cleaned all the dishes ๐Ÿ™‚

Sunday- Spaghetti Carbonara

Monday- Leftover Chilaquiles

Tuesday- Chicken Thighs with creamy mushrooms and snap peas

Wednesday- Salmon foil poached with corn and potatoes

Thursday- Leftover night

Friday- Go out!

EASY and FAST Pandemic Meals

Here are a few meals I have made over the last few days. Hope they inspire you to cook at home!

Bacon Burger with a runny egg on top!
Spaghetti and Meatballs but this time I just used frozen meatballs. No shame in that at all! Plus one of my favorites, mozzarella bruschetta. I sliced an Italian loaf of bread in medium sized pieces and slathered on olive oil on each piece and topped with a slice of fresh mozzarella. I put that in the oven on the second rack halfway through the pasta baking. It about 8-10. The oven was at 350.
I chopped up 3 tomatoes, some fresh basil, and mixed it with a tablespoon of olive oil and a tablespoon of balsamic glaze with a bit of salt and pepper. Topped the cheese toast with the tomato mixture and topped with more balsamic drizzle and basil.
Jambalaya- I made this for the hubby for his lunch. I sliced one chicken thigh and cooked it in a cast iron pan. Then I added 2 pieces of sliced Andouille sausages until they were heated through. Lastly I added the shrimp and cooked it for about 2 minutes per side. Then I added the meat to a cooked box of Jambalaya Rice mix. Pretty easy to throw together. I had a few bites to taste test ๐Ÿ˜‰
Becca’s favorite- Shake and Bake Pork Chops. I always try to have a box in my pantry. Always a classic!

Weekly Meal Plan 8/12

Surprise! It is back on! It has to be. This past week when the hubby was out of town and it was my first week back at school, cooking didn’t really happen. At least in the summer, I can cook up an omelet or something. I had plenty of tomato sandwiches and bowls of cereal. I was used to lazy cooking, because that is summer cooking to me.

Now that school and activities are back in session, there is no time for tons of cooking time or even going out to dinner. I am going to do my best to eliminate fast food and take out most nights. I know that is a big challenge, but I want to get back in the kitchen more and at the end of the day save money and spend time with everyone. With 2 girls on different practice schedules, it will be hard! I want to cook and sit with both and talk to them and ask about how their day went, even if that means they are scarfing down a bowl of pasta while I am doing dishes. Here is my meal plan for this week plus a few ideas for leftovers. I usually cook 3-4 times a week during the school year. 1 night we go out and the other 2 days are leftovers. Any ideas you have for leftovers?

Crock Pot Pork Butt– BBQ Pork Sandwiches with baked beans (Grilled Pork and Cheese Quesadillas)

Rotisserie Chicken from the Store- Chicken Alfredo Pasta (Oven Roasted Chicken and Cheese Melt Sandwiches)

Crock Pot Turkey Sausage Chili (heat in microwave and enjoy again) This recipe except I added corn and only used kidney beans and pinto beans.

Back to School- Meal Prep

Well, its that time of year again, folks. Back to school. Whether you are excited to send your adorable little rugrats off to school again, don’t want summer to ever end, a teacher who is finally ready to go back, or a teacher who loves teaching, but will miss her summer memories and moments with her kids (the last one is me), the time has finally come. Time to pull off the band aid and pull out the crock pot, because we are back to crazy schedules with sports, practices, and homework; not to mention trying to figure out what to make for dinner.

I will try to help you with some ideas a long the way. My girls are in 4th and 6th grade (middle school- ack!) and they both cheer. At different times… 3 nights a week. Not to mention art class and orchestra practices. I will be making some old favorites, making up new favorites, and researching my trusty cookbook collection and favorite blogs for more ideas. Here is what is on the menu for this week…

Sunday- We had some good old fashioned Bubba Burgers. I had a turkey burger. I always try to have some beef, turkey, and veggie burgers in the freezer. To make them a bit more interesting, I add a splash of Worcestershire sauce on each side. Gives them a meatier flavor.

Monday- Crockpot BBQ Chicken– No one wants to cook on the first day of school, so this crockpot favorite is very versatile. Chicken Thighs were on sale today, so I am subbing those for breasts.

Tuesday-ย  Pasta Bake leftovers from this Saturday

Wednesday- I have to take Becca to an ice cream social at 6 pm, so probably a sandwich or something.

Thursday- Late practice night, so I will probably heat up some fish sticks or another burger for the girls. I might get a Poke bowl or Indian Food.

Friday- Pass Out on the couch and drink lots of wine… It is going to be a long week…
