Chicken Cordon Bleu

Trying to catch up here! Cooking so many yummy meals! Here is an oldie, but goodie 😉 I have a few different versions of this, but this time I covered it in cheese!

Pounded out 4 chicken breasts. Rebecca really loves helping me with this. She says it helps her anxiety 😉 Then I placed one piece of deli ham and 1 1/2 pieces of Swiss cheese.
Rolled them up and stuck them together with a toothpick.
Covered with more Swiss cheese and baked for 40 minutes at 350. I served them with mashed potatoes. My trick is to cook the potatoes in milk and a stick of butter. Then I whip them up with the liquid a little bit at a time until they are super creamy and lump free!
The link at the top has a great leftover use for this in a baked pasta dish. Rebecca ate all the leftovers for our weekly clean out the fridge night. The rest of us CRUSHED all the leftover spaghetti and meatballs.

EASY and FAST Pandemic Meals

Here are a few meals I have made over the last few days. Hope they inspire you to cook at home!

Bacon Burger with a runny egg on top!
Spaghetti and Meatballs but this time I just used frozen meatballs. No shame in that at all! Plus one of my favorites, mozzarella bruschetta. I sliced an Italian loaf of bread in medium sized pieces and slathered on olive oil on each piece and topped with a slice of fresh mozzarella. I put that in the oven on the second rack halfway through the pasta baking. It about 8-10. The oven was at 350.
I chopped up 3 tomatoes, some fresh basil, and mixed it with a tablespoon of olive oil and a tablespoon of balsamic glaze with a bit of salt and pepper. Topped the cheese toast with the tomato mixture and topped with more balsamic drizzle and basil.
Jambalaya- I made this for the hubby for his lunch. I sliced one chicken thigh and cooked it in a cast iron pan. Then I added 2 pieces of sliced Andouille sausages until they were heated through. Lastly I added the shrimp and cooked it for about 2 minutes per side. Then I added the meat to a cooked box of Jambalaya Rice mix. Pretty easy to throw together. I had a few bites to taste test 😉

Easy Ham and Cheese Quiche

I found a random frozen pie crust in the freezer, so I decided to make a yummy quiche, which basically was just for me, because no one else ate it. You could leave out the ham and add in veggies to make this vegetarian. The crust broke on me, but it was still summer yummy! This is was all I ate this weekend 😉

INGREDIENTS

  • 4 eggs, lightly beaten
  • 1 cup whole milk (or half and half)
  • 1 1/2 cups diced ham
  • 2 cups shredded cheddar cheese (or mix it up with what you have)
  • 1 deep dish frozen pie crust added in a pie pan
  • salt and pepper to taste

INSTRUCTIONS

  • Preheat oven to 375 degrees.
  • In a large bowl, whisk together eggs, half-and-half, salt and pepper.
  • Stir in ham and cheeses. Save some cheese for the top 😉
  • Pour filling into pie crust, set on a baking sheet and place in oven for 40 to 45 minutes, or until set.

Jicama, Tomato, and Cilantro Slaw

Another yummy way to utilize your summer tomatoes!

1/2 raw Jicama, 1 Summer tomato, and 1 bunch of cilantro. Chop all these summer beauties and mix with a bit of olive oil and salt-and-pepper. Perfection for a slaw or salad to add to your perfect grilled meat.
