Oven Roasted Rosemary Garlic Butter Cod and Broccoli

Hey, friends! Hope you had a great weekend! Ours was spectacular here. Lots of fun family adventure time and relaxing. Tonight I decided to make an easy and healthy fish dish. I got some really pretty broccoli from the farmers’ market yesterday and also picked up some fresh cod.

It was super easy. I preheated the oven to 375. I put all my cod (heavily salted and peppered) and broccoli in a large aluminum foil pouch with a stick of butter (cut up), 4 cloves of garlic crushed, and 2 sprigs of rosemary. I cooked it for 25 minutes in the oven on a sheet tray. It came out perfect. I also added a side of rice pilaf, that took 25 minutes to make. So yummy! Clean plates all around!
