Easy Skillet Pasta

When my husband is on call (medical pilot), I don’t really plan dinner. There is really no point. Sure, the girls and I have to eat, but we will eat WHATEVER for dinner…cereal, eggs and toast, leftovers, pizza, fish sticks, corn dogs, buttered pasta, chips and dip etc.

When it is a surprise he is home, I try to make something out of nothing even when we just really want to go out. This time of year we skimp on eating out to make sure the girls have a good Christmas, so here is what I came up with tonight…

Ingredients

1 pound FROZEN (or not) ground beef
1 small jar of marinara
1 can roasted diced tomaoes
1 tablespoon Garlic Salt
1 package of penne

Directions

Boil salted water for the pasta. Drop pasta when boiling.

On medium high heat, cook the meat. If frozen, defrost a bit at a time and rotate in the pan until browned. If not frozen, cook per usual. I add all of the garlic salt halfway through, no matter what. Drain if its extra fatty and oily; or not. No one is there to see.

Add the marinara to the meat. I added a can of roasted diced tomatoes to the mix bc of the ratio of meat to sauce and pasta, but if you have a giant jar of sauce or homemade sauce; YOU DO YOU!

Add the slightly al dente pasta to the meat and marinara. Parm it up!

I mainly added this recipe bc you can cook dinner on a weeknight with frozen ground beef.

Mongolian Beef and Broccoli

Evening guys! My husband saw a recipe like this on You Tube and wanted me to make it for dinner. I added some broccoli to the recipe and topped it on some sticky sushi rice. Delicious!

Ingredients

1 large flank steak or 2 skirt steaks, sliced thinly against the grain
1/4 cup cornstarch
3 Tablespoons vegetable oil
1/2 cup low sodium soy sauce (I didn’t realize ours was not, so it was a tad salty, but still tasty)
1/4 cup sesame oil (next time I might add a bit more)
1/4 cup brown sugar
1/4 cup water
3 teaspoons minced ginger
3 garlic cloves, minced
1 package of broccoli (could use snow peas or whatever veggie you like)

 
Directions

In a large bowl or zip top bag add the sliced steak and cornstarch. Toss the beef for an even coating.

In a small mixing bowl combine soy sauce, sesame oil, brown sugar, water, ginger, and garlic. Add the sauce to a large heated wok or heavy pan and bring to a boil.

Pour the sauce back in the bowl for now. Add a bit of oil to the pan and let it heat up again.

Add the steak in a single layer and cook on each side for about a minute until the edges just start to brown. Do this in batches so your beef browns and does not steam. Once the steak is cooked, remove and set aside on a plate

Add a bit more oil the the pan and cook your broccoli for about 3-5 minutes until tender. I like mine to get a little crispy and still have a bit of a bite to it.

Add the steak to the pan as well as all of the sauce. Mix well and allow the sauce to thicken for a couple of minutes.

You could top with some sliced green onions, but my family is not typically a big fan of green onions.

Pot Roast

Hey guys! Last night I made this yummy pot roast for a table full of special guests 😉 Everyone loved it and went back in for seconds. Always a good sign! Give it a try!

Pot Roast

 Ingredients

A Beef Round Roast or Rump Roast
Red New potatoes and Yellow Gold-  Look for medium sized, otherwise cut in half large ones. Small ones will break a part and become a part of the sauce, which is awesome!
1 lb of baby carrots or regular carrots cut in thirds and halved
1  box of low sodium beef stock and one beer (wine would be great as well)
1 large onion cut in to large pieces. 
3 tablespoons Worcestershire
1 tablespoon garlic salt or powder (or fresh garlic crushed and chopped)
2 tablespoons each of Salt and pepper
1 tablespoon each of dried oregano and thyme

 Instructions

Rub your roast on both sides with your spices; salt, pepper, oregano, and thyme
Brown all sides of the roast in a large dutch oven (in a bit of butter or oil)
Take out the beef and add in your onion. I like to add in the beer here to get up all those bits of meat. I save a swig for the cook 😉
Put your potatoes and carrots on the bottom.
Add the meat back in on top.
Add in your beef stock and Worcestershire
Cover and cook on medium heat for 3-4 hours, depending on the size of your roast. Honestly, the longer it cooks the better and you really can never over cook a pot roast 🙂

Cheesy Bacon Meatloaf

I have made a variety of meatloaf recipes on the blog before. Here is my newest version. It was super tasty!

Cheesy Bacon Meatloaf

Ingredients
11/2 pound mix of ground beef and pork
2 eggs
About 3/4 sleeve of crackers
2 tablespoons Worcestershire
1 small can of tomato sauce
1 container of shredded mozzarella cheese
1 teaspoon of garlic powder
1 teaspoon of onion powder
6 pieces of bacon, cooked and chopped
salt and pepper to taste- do not skimp

Directions

In a large bowl combine the ground meat, spices, bacon, egg, crackers, a couple tablespoons of tomato sauce, and a handful of cheese.

Get in there and mix it up with your hands. Mix just enough to combine the ingredients.

Take mixture, form in a loaf shape in a long casserole dish (spray with non-stick spray) Top with more tomato sauce then cover in cheese. 375 degrees for about 45 minutes.

Cheesy Italian Meatloaf

Happy New Year! I hope everyone had a great NYE and is having a nice relaxing day at home with family and friends. So a couple of days ago, I made this really yummy meatloaf. I had about a pound of ground beef and knew I wanted to make meatloaf, but I wanted to try something new. So I looked around the fridge and pantry for a while, and discovered a small can of tomato sauce and some shredded mozzarella. Here is how I made it… GO DAWGS!!!!

Cheesy Italian Meatloaf

Ingredients
1 pound of ground beef
1 egg
About 3/4 sleeve of crackers (soda or butter)
2 tablespoons Worcestershire
1 small can of tomato sauce
1 tablespoon of tomato paste
1 container of shredded mozzarella cheese
1 teaspoon of garlic powder
1 teaspoon of onion powder
1 teaspoon each of thyme, marjoram, and oregano
salt and pepper to taste- do not skimp

Directions

In a large bowl combine the beef, egg, crackers, and all your spices. I also put a little bit of the tomato sauce and cheese in the beef mixture as well. I get in there and mix it up with my hands. Mix just enough to combine the ingredients. I take my mixture, form in a loaf shape in a long dish (spray with non-stick spray) Top with more tomato sauce then cover in cheese. 375 degrees for about 45 minutes.

Served it with some mashed potatoes, peas, and crescent rolls. Delish!
