Bruschetta Chicken

I am one night behind on my meal plan. Life happens. Things come up. When you have the chance to go to a pizza pool party, you go! So instead of white wine chicken and lasagna with bruschetta, I made bruschetta chicken. Plus, I still have my freezer leftover lasagna meal for next week!

Add olive oil, salt, pepper, and poultry seasoning to the chicken in a Ziploc baggie, then squish it all together for a minute or so. Then, brown both sides of chicken in your cast iron skillet. Each side about 8-10 minutes. Put the pan in a 350 oven.

Cut a tomato and some mozzarella. Thinly slice some basil. I roll mine up then chop it up. Place these on top of your chicken in the oven. When you start to see your cheese melt a bit, turn on the broil. Clean a couple of dishes. This will be helpful after dinner. While you do these, your chicken will be cooking in your over for a bit more. Pour yourself a glass of wine (or second) and take a few sips. Cook until all the cheese is melty and browned on top.

Chicken Friand

I made this recipe a few weeks ago after my husband and I had recently both eaten at the French place, Le Madeline. I thought, well, I could try to make that. It doesn’t seem too hard. It is basically chicken and mushrooms in a puff pastry with cream sauce.

I looked up a recipe for a possible copycat, but it called for cream of mushroom condensed soup. I am a little snobby when it comes to canned soups. I just really don’t like them. They make the food taste a bit like the metal can they come in and are full of who-knows-what and TONS of sodium. Plus, it just looks gross…it kinda comes out in a glob. Well, who needs the soup when you can use real mushrooms and real cream?

Take out your puff pastry and let it thaw out while you are preparing the chicken and sauce.

Chicken: Boil 2 chicken breasts for about 20 minutes or so. Take them out of the pan and let them cool completely, then shred.

Sauce: Slice 1 onion and a couple of cloves of garlic. Put in a hot pan with a few tablespoons of butter and olive oil. I like the combo of these 2 together. Let them cook for about 10 minutes or so. Then add a pint of mushrooms. Only a pint, otherwise you will crowd the pan. Cook another 10. Add some salt and pepper to the mix. Then I add over half of a container of mascarpone or cream cheese and a couple of swishes of heavy cream. I don’t really have exact measurements; eyeball it until your liking. I also add some chicken stock and a little dry white wine to the pan. Let this reduce for a few minutes. The sauce should coat the back of your spoon. If you run your finger down the back of the spoon and you leave a mark, your sauce is ready!

Take your thawed puff pastry pieces and cut them in half. I used both sheets, so I ended up with 4 rectangles. Take your shredded chicken and mix it with about half of your sauce. Distribute the chicken mixture on one half of the pastry. Then fold them over, crimp the edges with a fork, and brush your pastry with egg wash. Cut a couple of slits in the top so it won’t explode in the over! Bake at 400 until pastry is puffy and brown…about 25 min or so. Add the rest of the sauce on top of your pastry.

Since I made 4 of them, I froze 2. They freeze beautifully and you just have to pop them back in the oven until warmed through and crusty on top again! You can also freeze the sauce in a baggie or small container. Mushroom Gravy is not the most photogenic food =)973981_10151644260378334_713274013_n

Beef and Chicken Enchiladas

Have you ever stopped and thought about all the different foods we call, “Mexican Food?” It seems everything is kinda the same just wrapped in a corn or flour tortilla in some way or another. Quesadilla, taco, burrito, enchilada, taqito, etc. No matter the preparation, you can transform it into any yummy dish using the right seasonings and cooking methods. It is one of my favorite cuisines. Maybe because I love guacamole, sour cream, queso, chips, and margaritas.

I used to hate enchiladas. I never understood why anyone just didn’t get a burrito and call it a day. It turns out corn tortillas have been the culprit all the time. I just couldn’t get past the consistency of a corn tortilla. I like crunchy. I like soft. I just do not like that in-between consistency.

I have found a few ways to get past this. 1. Fry the corn tortillas in oil for 5-10 seconds on each side. A bit messy and not very healthy. 2. Place the tortillas in a paper towel and put them in the microwave for 15 seconds. This is healthy and practical. It gets the tortillas pliable to load up with your ingredients and not break. Plus, it makes them a bit softer in the oven. 3. You could also just use flour tortillas. Not authentic, but doable if you already have these in your fridge.

For the filling…chicken, beef, shrimp, veggies, bean; there are many choices. Tonight I made chicken and beef. I always like to make a double batch of enchiladas, because they freeze beautifully. Nothing better than coming home on a week night, too tired to cook, and then remember you have these sweet gems in the freezer!

Chicken Filling- There are many different ways to make your chicken, but this is how I decided to do it tonight. I boiled the chicken in chicken stock (I had homemade stock in the freezer.) You could use box or can in you have it; you could use water; or you could use a combo of both. Season your chicken well, even at this point. I used salt, pepper, a bit of poultry seasoning, ground cumin, and some adobo all spice (in the ethnic section of your grocery store). Boil on med. heat until tender and cooked through. I used 2 boneless skinless chicken breasts cut in half and cooked it for about 18 minutes. Cool. Shred. Then I added a bit of enchilada sauce, and a sprinkle of all the above seasonings, along with garlic and onion powder. Add half a can of green chilies. Mix together.

Beef Filling- Again, many different variations, but this is how I made mine. Cut and chop 1 onion and 2 garlic cloves. Start to brown in a med. pan for a bit. Then add your ground beef. Add a couple of tablespoons of Worcestershire. I am in love with the combo of beef and Worcestershire. However you pronounce it, it brings out an extra layer of flavor to the beef. I also added 2 sprinkles of crushed red peppers for a bit of a kick. LOVE! Lastly, add most of the same seasonings as the chicken; Adobo seasoning, ground cumin, salt, pepper.

I sprayed my 2 pans with Pam and put some enchilada sauce on the bottom of each. Once all the meat is cooled, add to the tortillas with some mixed Mexican cheese. Fold and place seam side down in your pan. Cover with enchilada sauce, more Mexican cheese, and some crumbled queso fresco (crumbly Mexican cheese) on top. I used 2 different enchilada sauces. One was from Old El Paso (on chicken) and one was a roasted tomato from Rick Bayless (on beef) I wanted to try out. Don’t be afraid to experiment!

I cooked it about 25 minutes (cooked through and cheese melted on top) on 350.
