Catching Up…

Hello lovelies. How have you guys been? So we are in week 5 now of school. It seems crazy that we are already here at this point. Everything is just so weird and different, and I cannot even explain it. The kids seem to be catching on to this strange new way of learning, and the teachers only have to just keep doing our best. On the home front, we are busy back with school, homework, and cheer. I just have to breathe, relax, and find balance 😉

Food and recipes have been mostly repeats of favorites. Here are a few that we have enjoyed… Hope to come soon with more!

Oven Roasted Chicken and Potatoes- Brown 4 chicken thighs in a cast iron skillet. That out the chicken, put in potatoes, and put the chicken back on top. Cook at 375 for about 40-45 minutes- potatoes should be tender and chicken will be perfect!

The Best Homemade Alfredo Sauce

I made this alfredo pasta with Shrimp and peas. The peas were leftover from a couple days ago and the shrimp were cooked in more garlic butter on the side, because one daughter HATES SHRIMP AND IT CAN’T TOUCH MY PASTA. They don’t matter. This is all about the sauce.

  1. 1/2 Cup Butter- that is one stick 😉 Never said this was healthy.
  2. 1 1/2 Cups Heavy Cream (this time I added mostly half and half bc I was down to just a 1/2 cup of heavy cream.
  3. 1 Garlic Clove, Minced (or 1 teaspoon of garlic powder)
  4. 1 teaspoon of freshly grated nutmeg- Seriously, buy this. It comes in a container with a bunch of little nutmeg balls and they are delicious in anything savory and/or sweet. I usually put it in anything creamy or sweet. It is great in pancakes, too.
  5. 1/2 Teaspoon Salt
  6. 1/4 Teaspoon Pepper
  7. 2 Cups Freshly Grated Parmesan Cheese. plus more on the top at them end.

Directions

Add the butter and cream to a large skillet.

Simmer over low heat for 2 minutes.

Whisk in the garlic, nutmeg, salt, and pepper for one minute.

Whisk in the parmesan cheese until melted.

Blueberry Syrup Sauce and Blueberry Vanilla Pancakes

Yesterday I was taking stock of the fridge and what I needed to get from the store. I spied a huge container of blueberries that we got from Costco. My family is so weird when it comes to fruit. Either they gobble up all the berries, bananas, apples, oranges, etc. that I buy, or they never eat them and I have to figure out what to do with them before they rot.

The berries were looking a little grumpy, so I threw them in a pot with a cup of sugar, a few tablespoons of lemon juice (could use orange juice), 2 tablespoons of maple syrup, half of cup of water, and a splash of white wine. The alcohol cooks out, NBD. I cooked them on medium heat until they boiled, then I turned the burner down to low and let them simmer for 20 more minutes.

My neighbor got a nice gift 😉

I have been converted to boxed pancake mix, but only this one… I never follow directions, so I add a dollop of vanilla yogurt and just enough water to create the perfect pancake batter. This also makes great waffles 😉

Chicken Parm Sandwiches

Hey guys! So I made these bad boys last night. Everyone LOVED them! They were pretty easy to make. I took my classic Chicken Parm recipe, but instead of pasta, I put them on hoagies with some store bought marinara sauce and topped them with a ton of mozzarella cheese. I have also done the same thing with meatballs. The meatball subs taste yummy with provolone, too! Any way you build them, you can’t go wrong!
