Grilled Chicken Caesar Wraps

Another snow day! I am ready for winter to be over, but since I am stuck at home, I can at least make a healthy lunch for my family! My husband got the idea at the store the other day to take this to work for lunch, but since we are home, we all got to enjoy.

I butterflied and grilled up some chicken breasts on my cast iron stove top grill. These are a great investment for grilling in the winter. Then I sliced up some romaine lettuce and warmed up some Naan bread (you could use pita, flat bread, or tortilla) on the eye of the gas stove. I sliced up the chicken on the cutting board. My husband and I built our sammies and topped it with Caesar dressing.

I served the girls “deconstructed,” because the girls are not really into lettuce or dressings, but we make them try everything at least once each time at the table. Lizzie is beginning to get the taste for lettuce, so hopefully the others will come around.

Chicken with tomato and green chili sauce

Happy Monday! Want a quick dinner that comes together in less than an hour? If so, then here is a great dish for you! I had a package of chicken thighs defrosted. I browned them in my dutch oven. Then I took them out and added 1 chopped onion and 3 cloves of smashed chopped garlic. I cooked down for about 10 minutes. Then I added diced green chilies, 2 tablespoons of tomato paste, 1 can of diced tomatoes, and 1 can of crushed tomatoes. If you had any kind of cans of tomatoes, they would work…diced, peeled, crushed, sauce, etc. Always keep a few kinds in your pantry as a staple. You could add any kind of veggies you have in your fridge for this; mushrooms, carrots, peppers, etc. Anything goes! I added about a cup or more of red wine and my browned chicken. I let it cook for about 30 minutes. I served on top of pasta and had a side of kale chips (oven roasted at 200 for 30-45 minutes in olive oil and a bit of salt) and creamed corn (from a package- it is not corn season!) Don’t forget your crusty bread!

Chicken and Mushroom Stoganoff with Sauteed Spinach

Hey guys! So last night I made a delicious meal of pork chops, mashed potatoes, gravy, and peas. When I remembered to take a picture, everything had been mixed and melded together and was not very photogenic for my blog. There were 8 pork chops and 6 people. Papa (my dad) ate with us, so we had a full table. There were NO leftovers!!! Well, there was 1/2 a pork chop, but I fed it to Brutus, our dog. He is such a good boy! =)

I had some leftovers, so I just had to warm up the chicken and sauce. I cooked some whole wheat (healthy!) pasta, and I also sauteed some spinach with 3 sliced garlic cloves and a bit of olive oil (more healthy!) It comes together in less than 10 minutes. So simple! Another night of clean plates!

Coq au Riesling

I call this creamy mushroom chicken, but really it is called Coq a Riesling. Chicken cooked in Riesling (a kind of white wine) with cream and mushrooms. Delicious and succulent. Here is how I made it.

Coq au Riesling

Ingredients
Chicken- Get whatever chicken is on sale. I used chicken breasts. I have used thighs, legs, and a cut up roaster.
1 onion, diced
1 carton mushrooms, sliced —-use about a 1 to 1 1/2 cups of whatever mushrooms you like- I used button b/c they were on sale
3 cloves of crushed and diced garlic
1/3 cup of Heavy Cream—you can use cream, half-and half, or even whole milk- or any combination you have leftover in your fridge
container of regular cream cheese— or marscapone, sour cream, or a combination of any or all
1/2 bottle of Riesling —-If you don’t have Riesling, use whatever white wine you have on hand. I am sure it will still be amazing!

Directions

Cook your chicken in a bit of oil until brown on each side, about 8 minutes or so per side.

Take them out and cook down your sliced onions and smashed garlic for about 6-8 minutes. Then add your sliced mushrooms for another 6-8 minutes. Add about 2 tablespoons of butter. Add 1/4 bottle of Riesling. Cook down for 5-6 minutes.

Put in your chicken and add another 1/4 bottle of the Riesling. Yes, that was 1/2 bottle of wine. Just drink the rest. It won’t be good tomorrow. =) Cook for about 30 minutes in sauce.

Take chicken out and add your heavy cream and cream cheese. Mix well. It won’t fully melt yet. Add back in your chicken. Put on the lid and cook until your chicken is cooked and your cream cheese has melted.

Add to a bowl of polenta, couscous, or potatoes and a veggie. Of course, crusty bread is always a great addition!

Pantry Raid: Chicken and Mushrooms with Yellow Rice

Do you ever wonder, “What the hell are we going to have for dinner? I really don’t want to go to the store again this week! We can’t do take-out or the drive-thru again!!!! Ahhhh! Why are they always hungry???”

I have a simple answer. Eat what you already have.

Duh! That sounds easy enough, but life gets busy. You get stuck in traffic. You have some hungry kids in your car. They start whining and you see a meltdown in your future. You are just plain tired and don’t want to have to think about making dinner.

I am starting a new category called Pantry Raid to help you out with finding some easy pull together recipes that won’t take a long time. I have a few ways to help you out with this predicament.

1. Have lots of healthy snacks! Cheese, crackers, cereal bars, pretzels, hummus or peanut butter,chips and salsa… Always carry snacks in your purse/car until you can get home to prevent another night of Chicken Nuggets. Don’t get me wrong! I have no problem with the occasional Jimmy John’s/Zaxby’s etc. run when you have soccer/gymnastics/karate class once a week or so. It gets old fast! Even if you have to eat a little later, it is better to feed your kiddos a snack than cave in to fast food and restaurants all the time. Just think of your snacks as appetizers to your meal!

2. When you go to the store, always add a few staples in your cart—Here are some of my go-tos—-
Pantry- beans, green chilies, black olives, tomato sauce, rice, pasta, bread crumbs, stock in a box,potatoes, red wine, jar pesto
Fridge- onions, carrots, celery, a couple of herbs, mushrooms, tomato paste, soy sauce, hot sauce, white wine, cheese, heavy cream, cream cheese, favorite jar of pasta sauce, tofu
Freezer- meat, homemade stock, leftover homemade sauces, frozen veggies- peas and corn are our faves

3. Sit down on the weekend before you go to the store and meal plan. Here is where I wrote more about this earlier in the year

4. Make some make ahead meals or casseroles on the weekend and have them ready for the week ahead.

5. I have read this many times before…If you can only make it until Wed, you are golden! Plan for Sun-Wed- 4 meals. This means you can have a leftover/clean out the fridge night, family night out, and date night planned in there somewhere as well. You might not be able to complete your entire meal plan, but that is OK! Look on the bright side; Now you have that meal/ingredients for another time!

Here is how I do pantry raid nights (not to be confused with panty raids)-

1. Start with your protein. I had some chicken thighs in the freezer that I defrosted overnight in the fridge. If they need a head start or not quite finished thawing, put them under cold running water. NEVER leave meat out on the counter even for a few hours.
2. See what veggies or herbs you already have that needs to be used up. I had a container of mushrooms, an onion, thyme, and some parsley in the fridge. I had some corn in the freezer.
3. What is your grain? I had a container of yellow rice in the cabinet.

I browned my meat and took it off the heat. Then I added my chopped onion, 2 cloves of grated garlic, and a container of mushrooms. I deglazed the pan with some leftover stock I had in the fridge and 2 tablespoons of butter. I added my chicken back in and cooked the yellow rice. When the rice was done, the chicken was done. My corn was a Steam fresh bag that cooks in less than 5 minutes. Add some crusty bread, and you have dinner in about 30 minutes.
