Always thinking about my next meal…

Scene- 3 PM during my school’s fire drill thinking to myself- Hmmm, what are we going to do for dinner??? There is bacon the the fridge; lettuce and tomato from burger night; avocados, cheese, and eggs just like always. Oh, I forgot we have sourdough! BLT’S!

It was a bit diner style tonight in the Winkeljohn house. Becca and I were home tonight, and Rucks took Katie to Lacrosse, so we all ate at different times.  The girls ate leftover burgers; Katie with runny eggs and Becca with leftover baked beans.  😉 I really don’t mind being a short order cook every once in awhile.  They just know they can’t complain! img_5885-1

Turkey Sandwiches are my life now..

January has been a rough month. Lots of crazy work stuff and family life etc. etc. etc. Still sticking to the basics when all of Fam is home. Pastas, chicken, crock pot meals… When the hubby is out of town for work, rouge cooking takes place; eggs, cereal, Indian take out, tofu with rice… but mostly turkey sandwiches. This is my lunch (deli sliced turkey, provolone,mayo, and mustard) but for dinner, I would add a tomato and half an avocado.

Steak and Mushroom Sandwiches

Evening guys! This dinner came together super fast! I have made a few versions of this sandwich before, but this time I didn’t use peppers and I used sweet Hawaiian sub rolls. They turned out really great and everyone loved them (with the exception of Becca who picked out all the onions even though they were super caramelized and sweet). Oh, well! Can’t please everyone all of the time 😉

Steak and Mushroom Sandwiches

Ingredients

1 container of Steak- umms (6 slices)
1 onion thinly chopped
2 cloves smashed and minced garlic
1 large container of slices mushrooms
1 package of Sweet Hawaiian Mini Sub Rolls
6 slices provolone cheese
2 tablespoons Worcestershire sauce
2 tablespoons melted butter

Directions

Cook your onions, mushrooms, and garlic together with a bit of salt and pepper, at least 15 minutes.
Add in your Worcestershire sauce. Then add your beef. Mix well.

Add mixture the bottom halve of these rolls. I left them all together and cut apart at the end. Top with cheese.

Put on the lid and brush melted butter all over the top. Bake at 350 for about 15 minutes or so. The cheese will be super melty and the bread should be a bit crunchy. Bon Apetit!

Kale and Mushroom Grilled Cheese

Evening folks! I made this yummy sandwich for lunch today.

First I started cooking down a pint of sliced mushrooms with a tablespoon of butter, a splash of Worcestershire (leave out to make this vegetarian), and a sprinkle of salt and pepper. I cooked them down for about 15 minutes. img_1281

Meanwhile, I took a couple handfuls of the baby kale I got this morning at the market. A few leafs had some thick stems, so I ripped off just the leaves on those.  I cooked those down in a touch of olive oil with some salt and pepper.

I put mayo on both sides of both pieces of bread. I used Swiss cheese on both sides of the bread and added my kale and mushrooms. img_1284

Mayo on the outside of the bread on a grilled cheese is how most restaurants make their grilled cheese sandwiches… PERFECTION!!!!
