Hey guys! I hope everyone is having a great day. I think it has been an entire week since I have blogged. Here are some pics and fun shenanigans of the past week and weekend.
Blue Ribbon Meal- Chicken Souvlaki (spiced chicken on a pita with romaine and a yogurt sauce)
Leftover Loving- Leftover Chicken, Broccoli, and Super Cheesy Shells and CheeseI made a pepperoni quesadilla. This was the before. The after was a magical ooey-gooey cheesy golden quesadilla that lasted 3 minutes.My pretty friend came over for a yummy Chinese dinner.Becca’s special birthday dinner at Medieval Times. Tons of fun!
Happy birthday Becca!!! Today is her actual birthday. She brought doughnuts to school and they were a hit!
Howdy friends! Sorry I am just getting around writing this post. I was going to write it this weekend, but we had to put one of my sweet kitties down last night. He was 17 and has been blind for a few years, but he could still get around and seemed happy and content. Recently, he started having a hard time jumping in the bed and walking for long periods of time. This weekend it appears he may have had a stroke and lost his ability to walk. I rescued him off the street over 16 years ago. The vet thought that he was between 6 months and 1 year. He was full of fleas, ear mites, and super skinny. He fit right in with us and became best buds with Oscar (after a bit of fighting and territory matches). He became my fat little baby. The girls have only known life with the cats, so they have taken it pretty hard as well. We took today off to spend some special time together.

Yesterday we slept in. It felt SO good! So earlier this week we got a new roof. It has been a long time coming. So many projects, but they must be done! Anyways, the roofers accidentally punctured through the roof, so yesterday they came and repaired it and painted the whole ceiling in the living room/upstairs. It looks perfect. While they were painting, I took Brutus on a run. It wasn’t too cold, so we had a nice time. The rest of the night was relaxing and family time. =)
This morning we woke up semi-early and headed to Waffle House for breakfast (bacon, egg, and cheese on raisin toast). I took the pup out for a bit; man was it COLD! Still is, but then again, it is January. A little later, I went to the gym and got my Flow on with my favorite Bodyflow instructor, Lauren. The rest of the day has been super chill and lazy. Snuggling under the blankets with my girls is always the best part of the day ❤
Things are coming together nicely in the new kitchen. All that is left is to get the pantry fixed, plumbing for the sink, fridge, dishwasher, and disposal (major), install dishwasher and disposal, painting ceiling, put all the handles on the cabinets, and a few small odds and ends before cooking can begin. I can see the end of the tunnel! I have helped a bit here and there, but I have to give all the credit to my amazing husband who has done most all of the work himself. I know he wants it to be perfect, so I am trying to be very patient over here.
I am super excited to cook again for my family. The girls are so cute; they keep saying they want me to cook meals and not go out/get take-out so much ever again. I have to say I agree! Going out every once in a while is a nice treat, but it does get old fast.
I also don’t think I have used my microwave and toaster oven more in all the years I have had them than this past couple of months. Some of our favorites have been french toast sticks, waffles, Super Pretzels, corn dogs (I love the Morning Star Veggie ones), popcorn, and fried cheese sticks. My favorite trick was when I made grilled cheese sandwiches and cheese quesadillas in the waffle iron. I am a genius.

Today was the perfect Sunday. Sleeping in, yoga, lunch with a good friend and my girls, and a lazy afternoon and evening. The weekend goes by too fast!

The girls and I had lunch with one of my work friends. We ate at a small restaurant called Adriatic Grill. It looks like it might have been a Subway at one point. They have Mediterranean type food. I looked up some info on them and it seems it is a Bosnian family that runs the joint. They were super nice, service was awesome, and I want to try everything on the menu. I had chicken noodle soup, a lamb gyro, and we all shared dessert. The four of us shared Tres Leches, Raspberry Tiramisu, and a vanilla cream cake with chocolate shavings. I wish you all a happy Monday!
For a few days I had an easily accessible toaster oven and microwave. We ate lots of these…

We also ate out a couple of nights. This is my tilapia salad and lemon chicken soup from a local Greek place.
This weekend was; a Chick-fil-A chicken biscuit (at a 9 am playoff game), veggie grilled cheese from Five Guys (on the way to a 1 pm playoff game), Taco Mac wings and fries (right before Trick-or Treating), fried green tomatoes and crab cake (brunch with my girls at Another Broken Egg cafe), cheese and crackers, and 2 slices of pineapple pizza and 2 cheese bread sticks (Pizza Hut). Oh, and I may have eaten some Halloween candy 😉
