Happy Sunday night! The weekends always go by too fast! We had a blast this last weekend of October! Here are a few highlights…
Playing in Decatur with friends!
I made this amazing sandwich today for lunch. I took two pieces of sunflower bread (from Publix) and spread one side with pimento cheese (store bought brand Palmetto Cheese with bacon) and the other side with one tablespoon both of mayo and Dijon mustard. Then I added 2 slices of Havarti cheese and sandwiched it together. Then I grilled it up in a bit of butter.
I cut it in half to make it look like a heart ❤ It was very rich, but hit the spot. A perfect cheesy grilled cheese!
Happy Sunday! Why does the weekend have to go buy so fast? This was a pretty awesome one. We spent lots of time with family and friends, so whenever you get to do that, it is super special. Here are a few pictures of the weekend…
Loving on their Uncle Mac
Knows he is getting eggs 😉
Sausage Egg and Cheese Croissant
Impromptu Sleepover was a success!
Lots of fun at the fair! I feel like October weekends are the best! Lots of carnivals, fairs, and corn mazes to go to all leading up to Halloween.Even the moms joined in on the face painting fun!
You can’t go to the fair without getting funnel cake! Or Snow Cones!
Playing in the creek and making memories that will always put a smile on their face!
Hey guys! I hope you had an awesome weekend! Yesterday, we cheered on our teams (even though they all lost), spent quality family time together, and I met up with an old high school friend for dinner (Thai) and drinks (wine bar). Today was all about sleeping in, brunch, and lazy afternoons. Tonight the girls are having a picnic in front of the TV eating cheese and meat cracker sandwiches (think Lunchables) and I am creating some veggie dishes for myself to have for lunches for the week. Here is how I envision this week going down…
Sunday- Making Veggie Cauliflower Rice and Spaghetti Squash to keep on hand in the fridge for this week
Monday- Chicken and Veggie Stir Fry with Fresh Noodles (a few versions up on the blog, but I am thinking of a way to make this one kind of different)
Tuesday- Turkey Burgers
Wednesday- Competition Cheer Tryouts for Becca- Dinner at Opa afterwards (local Mediterranian joint)
Thursday- Clean out the Fridge Night
What are you guys making this week? Share in the comments section!
Happy October! Yea for Fall and cooler weather!
Long time since I have blogged last. It has really been a big adjustment this year. Lots of cheer practices, games, work, and busy family stuff going on here. We actually have been eating, but just nothing really new or blog worthy. I am really missing being creative in the kitchen, so I am hoping that I can shake off all the craziness, get back in the kitchen to relax, and create some fun new dishes!
This weekend the hubby and I went to what we call a Family Dinner with our best friends. It was my girl Jess’ birthday, so we did a lot of fun “adulting” things 😉 That is all I am going to say about that! The girls had fun at their grandparents house, and Brutus got some doggie play and spa time at Camp Bow Wow. A fun time was had by all. Today we all chilled, mommy took a much needed nap, and then we shopped for dinners this week.
Here is what is on the game plan…
Tonight- Roasted Chicken Plain and Simple- salt, pepper, olive oil
Monday- Crock Pot BBQ Pork Ribs
Tuesday- Mushroom Risotto
Wednesday- Chicken Pesto Pasta
Thursday- Breakfast for dinner! Maybe french toast or pancakes with eggs?
Friday- Family Night Out- Probably Mexican or Sushi
Enjoy the rest of your night!
Happy Saturday! I hope you guys are having a great weekend!
I am spending my weekend relaxing at the cabin with friends.
The girls are having a fun weekend with their grandparents.
Hello again, friends! I hope you are enjoying your weekend. Sadly, it is my last weekend before school starts back. Since we have to go back to work, school, and cheer practice, I really need to get back in to my weekly meal planning mode. So here is what we will be eating this week…
Saturday- Crispy Cod, corn, and mashed purple potatoes (Blue Apron Meal)
Sunday- Moroccan Lamb and Beef Pitas with Farro Salad (Blue Apron Meal)
Monday- Crockpot Meal- BBQ Pork Sandwiches, mac and cheese, and baked beans
Tuesday- Something with Chicken????
Wednesday- Out with my girls (Katie’s pick)
Thursday- Leftovers/Clean out the fridge
Friday- Dinner out with Friends
What are you guys eating this week? Any ideas on what to do with that chicken?
Have a great weekend 😉
Hey guys! I promise I am eating! Mostly quick meals at home, take-out, and the occasional take-out…
The reason why? Well, cheer season has started back again. School is around the corner. I am soaking up all the summer left!
My girls playing at the park. Missing one little angel here.
Sunday, I made some chicken stir fry kinda like this. The noodles were not the same, but everything else pretty much was. You could also use rice instead of noodles.
Last night, the hubby and I ate a sushi dinner after we dropped the girls off at cheer camp. It was glorious!
Today I ate 2 Eggo waffles standing over the counter, Jimmy John’s Lulu Club sandwich, and a Taco Bell bean burrito and nacho chips. They were all good…no regrets! YOLO 😉
Tomorrow is another crazy day! Probably will just drink coffee for breakfast, a tomato sandwich for lunch, and who knows what for dinner??? Only 5 more days of my official summer so anything is possible!
Good morning, friends! I hope everyone had a GREAT weekend!
Friday we had a great time at the pool. The girls had a blast with lots of the neighborhood kids.
Then the girls had a slumber party with a few friends. They had a blast!
Then they slept over with my parents. The hubby and I had a great time with some friends at the house. I made my “famous” enchiladas. It is nice to hang with family friends without kids every once in a while.
Then yesterday, my parents met us at Texas Roadhouse for dinner to celebrate the hubby’s birthday! Their filet is to die for! We started with some yummy potato skins.
Now on to the brunch I made this morning…
Sunny Side Up Eggs with Sauteed Mini Heirloom Tomatoes
I got some amazing tomatoes this week at the farmer’s market. I mean…July is the BEST for tomatoes! I took a couple of handfuls of those beauties and cooked them in a bit of olive oil with a good pinch of salt and pepper. I covered them with a lid and just let those babies pop and char for a good 5 minutes. I toasted some English muffins and made my sunny side up eggs.
I topped the English muffins with an egg and some of those gorgeous tomatoes!
Hey guys! I hope you guys had a great weekend! I know we did. We woke up early Saturday and hit up the farmer’s market. One of our favorite summer activities =)
But our favorite summer activities is to be outside. The pool, lake, beach, backyard water table… We love to play in the water and this weekend was filled with pool time.
Lots of selfies…
And a few naps… Have a great night and see ya real soon!
