Easy Weeknight Dinner Ideas

Hey guys! I thought I would do a little catch up from the week of what I have been cooking; Pretty much easy and fast. I’m not going to lie, when the girls request cereal and eggs, I am happy to oblige. This week has been all about cheer. I know, when is it not, but today Becca had a competition (FIRST PLACE!) so evenings have been dictated around that. A night out here, a bowl of cereal and a frozen waffle there; it has been busy! BUT here are a few fun and simple easy weeknight meals when you run out of milk and the spaghetti o supply has been demolished!

Creamy Chicken Pesto Pasta-  Rotisserie Chicken, cooked pasta, store bought basil, and a small container of heavy cream. Just cook the pasta dice up some chicken. Add it in a bowl and slowly add in your pesto and cream with a bit of heavy starchy pasta water until desired coating and creaminess! Make extra for some leftovers for lunch! Yum!img_6551-1

Lunch and Dinner  Remix- So the hubby and I made a bunch of chicken, red peppers, yellow rice, and black beans to take to work. Pretty straight forward, but the next day for dinner, I  decided to change it up a bit. I added all of these to a pan and warmed them up. Then I put them in a warm spinach tortilla with some Mexican cheese , sour cream, and avocado. Delicious and healthy!

I had an honor’s breakfast for my students, so I cooked up a few of these delicious frittatas. I also made just a plain cheese one for me and the girls for dinner. Sometimes simplicity and lots of protein are the  best things after a long day. Along with a glass or two of your favorite wine=)

Weekly Meal Plan 1/7/17

Afternoon guys! The sun is out and the snow is melting fast. We only had a dusting, so no reason really to freak out the way we did, but we never know how the weather in Georgia will be. We still have lots of winter left and possibility of  bad weather, but for now all is just fine.

We went out for brunch this morning to a place called First Watch. I really love it; everything I have gotten there has been super healthy and yummy. Everyone else in the family likes it fine, but I get to add it in to the brunch rotation occasionally. img_6340

Then we were off to the store. We haven’t been to the store as a family in a few weeks and our pantry and fridge were pretty bare, so we loaded up on a ton of food for the week.

Here is our meal plan for the week. I am going to start adding in our breakfast and lunch plans as well.

Breakfast- Egg and Sausage Burritos, Yogurt Parfaits, Avocado Toast, Cereal, Bagels and Cream Cheese, Oatmeal with milk, fruit, and honey

Lunch- Lime Chicken Bowls (recipe coming soon), Kitchen Sink Salad, leftovers from dinner

Dinner-

Sat-Homemade Chicken Tenders

 

Sun- Cauliflower Rice with Shrimp Stir Fry

Monday- Shrimp Pasta of some sort

Tuesday- Enchiladas

Wednesday- BBQ Pork Sandwiches

Thursday- Clean out the Fridge Night

Friday- Some sort of fish dish

Happy Sunday! Why does the weekend have to go by so fast???? I hope everyone enjoys every last minute of the rest of their weekend.  Here is my plan for dinner this week…

Sunday- Pan Seared Cod in Butter sauce

Monday- Crockpot Beef Stroganoff

Tuesday- Out

Wednesday- Breakfast for Dinner

Thursday- Baked Pasta

Meal Plan 11/27/16

Good evening! I hope you guys are having a great Sunday night. I am trying really hard not to cry that vacation is over and we have to go back to work and school tomorrow. I just keep telling myself, “3 more weeks until winter break. You can do it!”

Today has been a pretty quiet day. Sleeping in, making breakfast, catching up with a few chores, grocery shopping, and spending time in the kitchen. Here is what I am planning on making this week.

Sunday- Chicken Thighs with Veggies and Tomatoes over Yellow Rice (recipe coming later)

Monday-Chilaquiles in the Crockpot

Tuesday- Spaghetti and Meatballs, weeknight edition (i.e. frozen meatballs and jazzed up jarred sauce)

Wednesday- Mushroom and Asparagus Risotto- Something kind of like this .

Thursday- Kielbasa, pasta, and veggies

Friday- Out

Weekly Meal Plan 10/2/16

Hey guys! I hope you had an awesome weekend! Yesterday, we cheered on our teams (even though they all lost), spent quality family time together, and I met up with an old high school friend for dinner (Thai) and drinks (wine bar). Today was all about sleeping in, brunch, and lazy afternoons. Tonight the girls are having a picnic in front of the TV eating cheese and meat cracker sandwiches (think Lunchables) and I am creating some veggie dishes for myself to have for lunches for the week. Here is how I envision this week going down…

Sunday- Making Veggie Cauliflower Rice and Spaghetti Squash to keep on hand in the fridge for this week

Monday- Chicken and Veggie Stir Fry with Fresh Noodles (a few versions up on the blog, but I am thinking of a way to make this one kind of different)

Tuesday- Turkey Burgers

Wednesday-  Competition Cheer Tryouts for Becca- Dinner at Opa afterwards (local Mediterranian joint)

Thursday- Clean out the Fridge Night

Friday- IDK
