Leftover Lettuce Cups

Here is another idea on how to use up your leftovers; Lettuce Cups! These are a nice healthy way to use up leftover meat or veggies you have hanging around. Yesterday, I had the idea to make a snack with some leftover ingredients from my sandwich bar; bibb lettuce, tomato, bacon and a touch of mayo. A BLT without the bread! Today I made 2 lettuce cups with leftover Mexican steak and veggies topped with cheese and sour cream. A fajita without the tortilla!

If you are looking for a healthier alternative to bread, this is a super healthy idea. Even if you are not but just want to try something new, this is a delicious way to change it up. You could bag up all the ingredients individually and take this to work for a fast and easy lunch. I am even thinking of doing this with egg salad, chicken salad, or even roasted veggies to make a vegetarian meal. The options are endless! I hope you try this and enjoy!

Superbowl Party Idea- Sandwich Bar

Hey guys! Happy weekend! Normally there is no such thing as leftover bacon in our house, but today we had some leftover from breakfast. If you have any bacon in your fridge, may I suggest this idea for a great lunch or perhaps even a Super Bowl party idea??? Get the kids involved as well! They love this!

Sandwich Bar- In our case, a BLT bar- Not really rocket science…lay out bacon, lettuce(I used boston, but bibb or iceberg would be fine), tomato, toasted bread, and your condiments. You could even put out some cheese, sliced avocado, ham, turkey, sliced pickles, hot sauce, etc. to make a sandwich bar so anyone can make whatever sandwich they like!

Pizza Night 1/31/14

Happy Friday, y’all! So tonight we made pizza for dinner. It was perfect and delicious. We used Boboli already made, homemade pizza sauce (https://funfoodiefamily.com/category/pizzas-flatbreads-toasts/) from the oven, and our own fave ingredients to top it off; mushrooms, black olives, pepperonis, and leftover steak (from leftover steak kabobs like these… https://funfoodiefamily.com/2013/10/05/date-night-steak-kabobs-and-twice-baked-potatoes/. Of course, we cannot forget fresh grated mozzarella! These are the before pics, but too many hungry munchkins made me forget to take the after pictures! Family made pizza is always better than take-out!

Leftover Pork Ragu and Orzo

It is another snowy night here in Atlanta! Tonight we had some leftover Pork Ragu that I pulled out of the freezer a few days ago. I added it on top of some buttery orzo. It was very comforting! Stay warm and safe out there! Tomorrow afternoon it is supposed to finally over freezing, so hopefully the ice will melt!

French Onion Soup

It is a pretty cold and snowy day in Georgia. We don’t get snow every year, so when we do, we kinda freak out! Traffic sucks, school isn’t sure whether to close at the sign of cold or wait until it is too late and everyone is iced and snowed in. Lots is going on here, but everyone is cold and wants some comfort food. The girls ate some oatmeal with cinnamon sugar, honey, and milk. They gobbled it up! I had a taste and it was pretty yummy. Quick cooked plain oats plus a combo of cinnamon sugar that I had already made, a drizzle of honey, and a splash of milk. Easy!

I wanted something different. I spied 2 onions and half of a container of beef broth in the fridge. Eureka! French Onion Soup!!!

French Onion Soup- this serves about 4 small cups or 2 large bowls

Ingredients

2 onions plus a sprinkle of sugar and salt
1/2 container of beef broth (could use chicken or veggie broth)
1ish cup red wine (could use white wine with chicken/veggie broth)
2 tablespoons Worcestershire Sauce
cut up and toasted bread of choice- I used French
sliced or shredded cheese of choice- I used Swiss

Directions

Thinly slice the onions. Cook in a combo of a couple of tablespoons of olive oil and butter for at least 45 minutes. The onions are what make this soup. Cook as long as you can to get them super soft and caramelized. I also add the sugar and salt to help the cooking process and bring out the onions natural sweet flavor. 006

Add the wine. Cook for about 8 minutes until the wine reduces. Then add your stock and Worcestershire Sauce . Stir and cook through about 10 more minutes.

Ladle your soup in a ramekin or oven safe dish. Add some toasted bread. Top with your cheese.
Broil on high until cheese is nice and brown and bubbly! (so sorry, I thought I took a picture of this part!!!)

Enjoy with your favorite glass of wine. HEAVEN on a cold winter’s night!
