Leftover Loving- Steak, Potato, and Broccoli Frittata

Evening guys! Last night I had some leftovers from a steak and potato meal (made in my new kitchen!!!!) and some leftover egg drop soup. I really had no idea if this was going to work out, but it did. I chopped up the steak and veggies, mixed them with the egg drop soup, 2 beaten eggs, and lots of cheese. I cooked it in an oven safe pan until I could tell the eggs were setting on the sides, about 4 minutes. Then I put it in a 350 oven for about 10 minutes. It came out pretty yummy!  I had some for breakfast today and shared the rest with some co-workers. Hoping to get in the kitchen this weekend…I have a lot of catching up to do!

Friday Faves

FINALLY FRIDAY!!! Plus, it is a long weekend, so I am super stoked. My little ladies and I are having a girls’ day tomorrow, Pilates/Kids Yoga in the am, lunch, and movie time =) Dinner out with Daddy (maybe Mexican?) and if it is nice (not raining) I plan on taking the pup for a run. Sunday looks like it might be some sleeping in, Bodyflow, DVRing, working in the kitchen, and running. My dog is middle aged and getting too lazy and a bit fat, so I am going to whip his booty (and mine) in to shape 😉 I might be celebrating Martin Luther King’s birthday cooking my first meal in my new kitchen… We are SOOOOO close!

Weekend Wrap-Up 1/10/16

Hello lovelies! I hope you are having an amazing weekend!

Yesterday we slept in. It felt SO good! So earlier this week we got a new roof. It has been a long time coming. So many projects, but they must be done! Anyways, the roofers accidentally punctured through the roof, so yesterday they came and repaired it and painted the whole ceiling in the living room/upstairs. It looks perfect. While they were painting, I took Brutus on a run. It wasn’t too cold, so we had a nice time. The rest of the night was relaxing and family time. =)

This morning we woke up semi-early and headed to Waffle House for breakfast (bacon, egg, and cheese on raisin toast). I took the pup out for a bit; man was it COLD!  Still is, but then again, it is January. A little later, I went to the gym and got my Flow on with my favorite Bodyflow instructor, Lauren. The rest of the day has been super chill and lazy. Snuggling under the blankets with my girls is always the best part of the day ❤

Things are coming together nicely in the new kitchen. All that is left is to get the pantry fixed, plumbing for the sink, fridge, dishwasher, and disposal (major), install dishwasher and disposal, painting ceiling, put all the handles on the cabinets, and a few small odds and ends before cooking can begin. I can see the end of the tunnel! I have helped a bit here and there, but I have to give all the credit to my amazing husband who has done most all of the work himself. I know he wants it to be perfect, so I am trying to be very patient over here.

I am super excited to cook again for my family. The girls are so cute; they keep saying they want me to cook meals and not go out/get take-out so much ever again. I have to say I agree! Going out every once in a while is a nice treat, but it  does get old fast.

I also don’t think I have used my microwave and toaster oven more in all the years I have had them than this past couple of months. Some of our favorites have been french toast sticks, waffles, Super Pretzels, corn dogs (I love the Morning Star Veggie ones), popcorn, and fried cheese sticks. My favorite trick was when I made grilled cheese sandwiches and cheese quesadillas in the waffle iron. I am a genius.
