Bacon Wrapped Brown Sugar Pork Loin

Ingredients

1-1/2 pound pork loin
4-6 pieces of raw bacon

Brine-
1 cove garlic, sliced
3 handfuls of sage, torn
1 tablespoon of onion powder, garlic powder, salt, pepper, and paprika.
1 cup brown sugar
1/2 cup apple cider vinegar
1 cup olive oil

Directions

Add pork in the brine ingredients above for 1-2 hours.

Preheat oven to 425
Take pork out and wrap in bacon.

Cook for about 25-30 minutes. You should use a thermometer and it should reach 145 degrees. Then take it out and let it rest 10-15 minutes. 021

Evening friends! Today was the last day of Lacrosse camp for the girls. They had a blast and love the sport! I guess it will be cheering for football in the fall and playing lacrosse in spring. Go Dawgs!

While they went to Lacrosse camp, I took Barre. Just realized I have not changed out of my clothes from 8 hours ago. I love my leggings…so comfy! The girls were starving, so we ate some leftovers and then went to the public library. We came home and the girls played, read, and watched TV. I fell asleep on the couch and no one woke me up! It was GLORIOUS!!! Then I made this for dinner. =)

Oven Roasted Pork Loin

Preheat your oven to 400 degrees.
Rub your pork loin (mine was 2.5 pounds) with a couple tablespoons of olive oil, and a combo of salt, pepper, onion powder, garlic powder (next time I will add some fennel seeds) on all sides, about a tablespoon of each.
Put your pork in a shallow roasting dish or cast iron pan.
When the oven reaches 400 degrees, cook your pork fat side up for about 10 minutes.
Then lower your heat to 350 degrees and cook for about 40 more minutes (usually I do 20 minutes per pound) Use a thermometer. USDA says let it get to 160 and take it out, but I take mine out at 150 and let rest with aluminum foil for 10-15 minutes.

A Day for my Lulu

Evening, y’all! So today would be my sweet Lizzie’s 10th birthday. Lots of emotions, but trying to focus on all the good times.

I woke up early and went to a barre class, one of my favorite workouts. Then I went to the first farmer’s market of the season. What a beautiful morning! I bought a coffee to drink while I checked out all the vendors. Lots of great stuff. I bought some kale, a bunch of radishes, some pimento goat cheese, and some cinnamon bread (Lizzie’s favorite).

Then I came home to a sleepy family still in their pajamas. Everyone had some waffles and cinnamon bread and got ready to head out to a local strawberry farm. We picked TONS of yummy strawberries and had a blast.
After we came home, we all had a pretty chill afternoon… Jimmy Johns Lunch, Naps, TV, playing outside. I made one of her favorite meals for dinner; Pork Ragu with Bucatini and Strawberry Shortcake.

Tomorrow I am going to a Bodyflow class (Thai Chi, Pilates, and Yoga Fusion class) and hanging out with awesome friends at the new Avengers movie. Hope you guys have a fantastic Sunday!

Blog Catch Up… Pork, Pasta, Pasta…

Evening guys! I hope everyone is doing well on this fine Wednesday night! I had a great session with my girls from Girls on the Run tonight. We stretch, run, do yoga and strength training, and have lots of amazing conversations. Girl Power! So much fun =) I came home and made an easy chicken pasta dish…
I cooked 3 meals in last 2 days and only took pics of one of them. Oh well…

Last night I made a 5 minute dinner. I made pork chops…yeah, I know…been there done that… =) Well, these took 3 minutes. For real. The package said cook on each side for 4 minutes, but if I did that they would have tasted like shoe leather. I cooked them in a bit of oil for about 1 1/2 minutes per side on SUPER HIGH heat. Perfection! I served them with a side of couscous and a Steam-fresh bag of mixed veggies (both about 5 minutes).

Then I made some lunch for a couple of days… Creamy Orzo with Bacon, Tomatoes, and Peas. Just cook some Orzo (small rice like pasta). In the meantime, cook chopped bacon (1/2 pound). Take out of pan and add your onions and cherry tomatoes. Cook for about 10 minutes in a bit of olive oil. Add your cooked orzo and frozen peas. Add in about a cup Parmesan. Stir and cook together until peas are warmed through. Top with chopped bacon. So wish I had a picture!!!!

Tonight I made Cheesy Chicken Tagliatelle with Broccoli and Mushrooms. Heaven. Dice some chicken thighs or breasts in to bite-sized pieces. Brown in a pan with 1/2 chopped onion, 1/2 container of sliced mushrooms, and 1 head broccoli florets (15 minutes or so depending on your preference for broccoli doneness). Salt and pepper to taste. Meanwhile, cook some tagliatelle in salted water (nests of long fettichini like pasta- or use whatever pasta your have in your cabinet). Add the pasta to your chicken and veggie mixture. Add a nice glug of olive oil and a mug of starchy pasta water. Add more seasoning if needed. My kids hate spicy, but I would love for you to add a good serving of red pepper flakes!

Throwback Thursday- Bacon Wrapped Pork

Hey guys! This week has been pretty great, but there has not been a lot of cooking going on. Lots of quick easy meals (spaghetti and meat sauce, taco night, grilled cheese and Spaghetti O’s), quick meals on the go (Jimmy John’s), and dinners out and in (Ruby Tuesday’s and Chinese night). Tomorrow I have my girls excited about Indian food…FINALLY!!! A new place opened up 2 minutes from my house, so we are having a girl night tomorrow and trying it out! I will let you know the outcome. The blog has been a bit lonely, so I decided to add a quick post on something that needs to repeated real soon…You are welcome!!!!!!
