Crispy Cod with Corn and Mashed Purple Potatoes

Evening food lovers! So tonight I used the ingredients from my Blue Apron meal. I did not actually follow the real recipe for a few reasons. The actual recipe is supposed to have corn on the cob with garlic butter and pickled cucumbers. There was supposed to be 2 ears of corn, but there was only one, so I improvised with a Steam fresh bag. Only Katie and I like cucumbers, and if I tried to pickle them she probably would have cried. So I cut them up for us so we could snack on them.

The fish was treated with the standard breading procedure- FEB- Flour, Egg, and Breadcrumbs with seasoning (salt, pepper,Old Bay- my addition) and cooked on each side for about 3 minutes in a bit of olive oil.

The potatoes were chopped in medium sized pieces and boiled until soft, about 14 minutes. I added 3 tablespoons of butter and seasoned it with a healthy portion of salt and pepper. Then I took my handy dandy potato masher and mashed those beauties right up!

Gluten Free Beer Battered Cod

For all my gluten free friends…

Gluten Free Beer Battered Cod

Ingredients-

4 pieces of cod- but you can use any white fish you like.
Beer Batter-
Whisk the following in a medium mixing bowl:
1 cup RICE flour
1 1/2 teaspoon baking powder
1 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1 tablespoon Old Bay seasoning
Whisk together slowly with 1 cup of brown beer (gluten free beer exists!) Refrigerate for 15 minutes.

Directions-

Heat some vegetable oil in a pan. While it is heating up, dredge your fish in some cornstarch and tap off any excess cornstarch. Dip in to the batter and put in oil. Don’t crowd the pan. When the batter is set on one side, turn the fish over and cook until golden brown and delicious.

Pan-Seared Catfish with Spinach and Pesto Pasta

Hey guys! I hope you are having a great weekend! So far, it has been pretty nice and relaxing. Yesterday the girls went to a fun birthday party and played outside. I relaxed, caught up on my DVR, and cooked this yummy dinner. I hope you give it a try!

Ingredients

4 Catfish Fillets (any white fish would work)
3/4 pound of Linguine Pasta
1/2 cup of flour
1/2 pound fresh spinach
6 tablespoons of butter- or olive oil (I like to do a combo of both)
1/4 cup grated Parmesan
1/2 small container of prepared pesto
about 1/2 cup of dry white wine

Directions

Cook the pasta in heavily salted boiling water. As always, reserve about a cup of that starchy cooking water.

While the pasta cooks, begin cooking the fish. Put the flour on a plate. Make sure you pat the fish dry. Salt and pepper each side of the fish. Coat the fish in the flour, tapping off any excess. Melt about 3 tablespoons of butter in a pan and cook the fish on the first side for about 6 minutes, or until golden brown. Flip and add the white wine and a small glug of olive oil. Cook the fish on the other side for about 3 minutes, depending on the thickness of your fish.

Stain your pasta. Add your spinach in the same pan you cooked your pasta in (less dishes!)Cook down just about 3 minutes or so. Add in your pesto and cheese. Stir back in your pasta. If it looks thick, loosen it up a bit with that starchy cooking water, a bit at a time. I top with just a bit more olive oil.

Delicious!

034Leftovers consist of lots of pasta and 1 fish filet. Thinking of some ways to change up my leftovers…1. Fish Tacos  2.Add shrimp or chicken to the pasta 3. Add in more sauteed veggies to the pasta for a vegetarian meal  4. Sauteed fish cakes 5. Soup- Pesto Noodle Soup or Fish Curry Soup… So many ideas!

If I come up with something good, I will let you know!

Happy Sunday!
