Homemade Marinara 10/12/13

Last night, I browned up some sweet Italian sausage and cooked up my penne. I added them in a pan with my sauce. Of course, you can’t forget to add shredded mozzarella!

I placed this covered in the fridge until tonight. My husband put in a 350 oven for an hour. When I came home from work, it was almost done! Uncover the last 10-15 minutes or so to get your cheese extra gooey. 012

Homemade Marinara 10/12/13

Hey ya’ll! I know you want a quick dinner. I know you reach for the prepared mixes and sauces. There are some great ones out there, but they cost you money. I know we are always trying to save some money, right? Here is a way. Make your own sauce. This is a marinara sauce. I have made my home made sauce tons of times, and they are always kinda different depending with what is in my fridge. This is tonight’s homemade marinara sauce…

1 onion chopped
1/2 garlic head; peeled, crushed, and chopped
1 whole stalk of celery roughly chopped
The rest of my trifecta of peppers chopped; red, yellow, and orange
Cook all these for 20 minutes
Add at least 3/4 of a bottle of red wine and a few tablespoons of tomato paste
Add 2 28 oz. can of San Marzano tomatoes; 1 peeled, 1 crushed
1 can of tomato sauce
add oregano, basil, 2 tablespoons of sugar and Worcestershire sauce

Cook for at least 2 hours. The longer the better.

Menu Plan 10/12

Sat- Mushroom and Swiss Burgers, baked beans- This is what we had tonight…pretty much empty plates all around!

Eating Out- Egg Harbor

We have been trying to find new places to eat at for brunch. As much as we love Waffle House, we like trying new places and having variety on the weekends. This place was not too far from us, a little less than 20 minutes. The Egg Harbor Cafe is a great place with lots of variety for breakfast and lunch. I got the Bacavado Omelet- Omelet made with bacon and avocado. My side was cheese grits plus an english muffin with delicious jam. My hubby had the meaty skillet with potatoes. Awesome!

Pizza Night!

So the government is still shut down and my poor husband has been stuck at home and out of a job now for 2 weeks. Today I think he was finally pushed over the breaking point. He finished laundry and all of the folding, but not the putting away part. He actually cleaned out the dishwasher!!!! Can you believe it???? The dishwasher is his household arch-nemesis! Then he went to the store to buy ingredients to make pizza, and he actually made pizza sauce by scratch. Well, even though I have a food blog and have committed to writing and taking pictures of my food, I thought he deserved a shout out for his pizza sauce. I asked him if he made up the recipe or did he look it up, and if he looked it up, what site did he find it on. He said he looked it up, and of course he has no clue what site. So here is a pizza sauce recipe and our yummy family made pizza.

Pizza Sauce-
In a sauce pan chopped 2 cloves garlic, 1/2 of an onion, and 3 celery stalks thinly sliced. Sweat about 25 minutes until very soft. Add 1 can tomato paste plus 1-2 cans of tomato sauce until you reach your desired pizza sauce consistency. Add dried oregano (you could use fresh), bay leave, salt, 1 tablespoon sugar, fennel seeds, and thinly sliced basil. Cook for 2 hours. You should have enough for leftovers. Freeze in a zip top baggie.

Pizza Dough- We used Publix dough. You could make it, buy it, or get some sort of flat bread to make your pizza.

Sausage, black olives, mushrooms
