Crispy Cod with Corn and Mashed Purple Potatoes

Evening food lovers! So tonight I used the ingredients from my Blue Apron meal. I did not actually follow the real recipe for a few reasons. The actual recipe is supposed to have corn on the cob with garlic butter and pickled cucumbers. There was supposed to be 2 ears of corn, but there was only one, so I improvised with a Steam fresh bag. Only Katie and I like cucumbers, and if I tried to pickle them she probably would have cried. So I cut them up for us so we could snack on them.

The fish was treated with the standard breading procedure- FEB- Flour, Egg, and Breadcrumbs with seasoning (salt, pepper,Old Bay- my addition) and cooked on each side for about 3 minutes in a bit of olive oil.

The potatoes were chopped in medium sized pieces and boiled until soft, about 14 minutes. I added 3 tablespoons of butter and seasoned it with a healthy portion of salt and pepper. Then I took my handy dandy potato masher and mashed those beauties right up!

 

Weekly Meal Plan 8/6/16

Hello again, friends! I hope you are enjoying your weekend. Sadly, it is my last weekend before school starts back. Since we have to go back to work, school, and cheer practice, I really need to get back in to my weekly meal planning mode. So here is what we will be eating this week…

Saturday- Crispy Cod, corn, and mashed purple potatoes (Blue Apron Meal)

Sunday- Moroccan Lamb and Beef Pitas with Farro Salad (Blue Apron Meal)

Monday- Crockpot Meal- BBQ Pork Sandwiches, mac and cheese, and baked beans

Tuesday-  Something with Chicken????

Wednesday- Out with my girls (Katie’s pick)

Thursday- Leftovers/Clean out the fridge

Friday- Dinner out with Friends

What are you guys eating this week? Any ideas on what to do with that chicken?

Baked Ziti

Happy Saturday everyone! A couple days ago, I made this very yummy and easy meal. I have made baked ziti a few times on the blog. On the weekends I usually make the sauce all afternoon and add it to my ground beef/sausage/veggie mixture and pasta. Well, Publix was having a BOGO on one of my favorite jarred sauces, so I decided to let the good people of Bertoli do all the work this time.

Easy Baked Ziti
Ingredientssausage (sub in ground beef or leave out the meat to make it vegetarian)
1 box of ziti noodles -or what ever tube shaped pasta you like
1 jars of your favorite pasta sauce- I used Bertoli- marinara and 3 cheese
2 med. bags or 1 large bag of mozzarella or Italian Cheese Blend
2 tablespoons Italian Seasoning (oregano, marjarum, thyme, etc)
2 teaspoons onion powder and garlic powder
salt and pepper to taste

Directions
Preheat oven to 350.
Brown your meat and add all your seasonings. Drain grease out of meat.
Bring a large pot of water to a boil- salt the water liberally
Cook pasta
Assemble in a large casserole pan layering sauce, pasta, meat, and cheese.
Cook for about 30 minutes or until cheese is melting and turning that yummy brown color.
Lots of leftovers!

No Shame


Becca has been begging for Sonic for a long time, now. I have tried to forget that she ever requested this, but too much time has passed. When I asked her what she wanted for dinner, without skipping a beat, she asked for Sonic again. So Becca got her beloved mozzarella sticks and tater tot’s, Katie got her cute little cheeseburger, and I had a pretty yummy grilled cheese with a stolen tater tot or two or half of the large size😂😂😂.

Turns out that we ❤️ Sonic. See you again in the fast food rotation in a few weeks when I feel like closing my kitchen after a mind-numbing day!
