Thursday- Tilapia- I made a new recipe last week, but my phone broke before I was able to blog about it. No worries! It was very good, and I have more tilapia in the freezer, so I am going to make it again this week. Something kinda sorta like this…

Hey guys! Hope you are having a great weekend! We have had lots of fun this weekend with Cheer and just hanging out together as a family. Loving this fall weather. Hoping fall lasts longer and yucky winter stays away for a while. Here is what I am planning on making this week. See ya later for the recipe my dinner tonight…

2. Hoisin and Sesame- 1/3 cup hoisin sauce, 2 tablespoons butter, 2 tablespoons honey,
2 tablespoons ginger paste or grated ginger, and 3/4 teaspoon sesame oil

Ginger Chicken

Happy Thursday! So on my meal plan this week, I was supposed to have take out Indian Monday, homemade chicken tenders on Tuesday, Chinese Take out Wed, and Chili tonight. Here is what went down…

Sunday lunch, the girls and I hit up the local Indian buffet. I gorged on EVERYTHING, and the girls noshed on Tandoori chicken, rice, Naan bread, and rice pudding. They were not fans of anything else.

Sunday dinner- Enchilada night happened!!!!

Monday night- Hubby was out. The girls wanted pizza. I turned on the oven…003

Wednesday- Chinese night was a go! My college friend, Miss Mandy (as the girls call her) came over and we ate, drank wine, and helped the girls with homework! We love Miss Mandy!

Thursday…CHICKEN!!! I thought about doing a Throwback Thursday chicken recipe, but I decided to go with a throw together dish from what I had in the kitchen and make it all new again. I came up with this LOVELY!!!

Ginger Chicken

Ingredients

2 chicken breasts
1 onion, chopped
one tablespoonish of salt, pepper, poultry seasoning, garlic powder, and ginger paste
1 tablespoon of minced ginger
1 cup liquid (broth, wine, water) I used veggie broth, because it is what I had
2 tablespoons butter and flour

Directions

Brown your seasoned chicken breasts on high heat (salt, pepper, poultry seasoning, garlic powder)
Take out of pan and add in your onions and ginger (paste and minced)
Add in your butter and flour. Whisk well. Add your liquid. Keep whisking vigorously until it is all mixed through and you have your desired consistency. Add more liquid if needed. Slice your chicken in thin pieces. Add back in to the sauce. Serve over rice.

After dinner I had a few leftovers and mixed it in my leftover Pad Thai Noodles. I added a tablespoon of sesame oil, a spoonful of Hoisin, and some leftover peas that were in the fridge. #leftoverlovin

Today was long. Very long. I didn’t get home until after 6, so the hubby proposed Greek…sold! I had some lamb and bean soup and a falafel platter. So yummy! Plus, there are leftovers!

Weekly Meal Plan 9/6/15

Hey guys! I hope you all are having a great labor day weekend! We had some out-of-town company this weekend. It is so great to spend time with family that we don’t get to see very often. Tomorrow it is back to the rat race, so here is my plan for dinner this week

Sunday-

Last night I made Italian Sausage Lasagna for dinner with a side of bruschetta. It was super yummy; everyone went in for seconds, but I still have enough for leftovers to take to lunch!

Italian Suasage Lasagna and Tomato and Basil Bruschetta

Ingredients-

1 pound ground Italian Sausage
1 onion, chopped
3 cloves garlic
1 large can diced tomatoes
1 can jarred mushrooms
1 jar of your favorite sauce- I used Classico Tomato and Basil
1 handful of chopped fresh basil, thyme, and rosemary
1 pound lasagna noodles
1 large bag of shredded mozzarella

Directions
Cook noodles according to package.
In a dutch oven or large heavy pot, cook down your onions, garlic, and sausage. When sausage is nice and brown, add in your diced tomatoes, mushrooms, and sauce. Add in your fresh herbs and mix well.
Layer your noodles, sauce, and cheese. Bake for about 30-40 minutes until your cheese starts bubble and turn brown. Once out of the oven, let it set up about 10-15 minutes. During this time, you can make the Bruchetta- layer olive oil, minced garlic, chopped tomatoes, and fresh cut basil on top of sliced of Italian loaf. 036

Monday- Tonight! Roast Chicken of some sort. I will let you know later tonight if it is something new.

Tuesday- Tacos

Wed- Lamb Chops (didn’t eat last week)

Thursday- Leftovers/Whatever Night

Friday- Linguine and Clams
