Oven Roasted Rosemary Garlic Butter Cod and Broccoli

Hey, friends! Hope you had a great weekend! Ours was spectacular here. Lots of fun family adventure time and relaxing. Tonight I decided to make an easy and healthy fish dish. I got some really pretty broccoli from the farmers’ market yesterday and also picked up some fresh cod.

It was super easy. I preheated the oven to 375. I put all my cod (heavily salted and peppered) and broccoli in a large aluminum foil pouch with a stick of butter (cut up), 4 cloves of garlic crushed, and 2 sprigs of rosemary. I cooked it for 25 minutes in the oven on a sheet tray. It came out perfect. I also added a side of rice pilaf, that took 25 minutes to make. So yummy! Clean plates all around!

Leftover Chinese- Crispy Fried Rice

Summer is finally upon us! As a teacher and a mom who loves spending the summer with my kids, I am super excited that the school year is over. Now we can kick back and relax and get back to the lazy days of summer. I still have a few teacher meetings to go to this summer, but it’s not going to be that bad!

A few days ago was the last day of school, so the last thing I really wanted to do was cook dinner. We decided to order out Chinese food. I ordered the veggie fried rice with extra broccoli and my husband ordered spicy basil chicken. The girls gobbled up all the Edamame, wonton soup, and fried potstickers.

Today was a lazy day where we woke up on the late side (9:30 instead of 6:30), went to the farmers market, and had lots of samples and iced coffee and smoothies. The girls also downed an e ntire container of raspberries and half a loaf of cinnamon sugar bread.

I took all the Chinese leftovers (veggie fried rice and basil chicken), mixed them with one egg and about a cup of breadcrumbs. I only had regular breadcrumbs, but Panko would work. Then in a hot pan with a few tablespoons of vegetable oil, I fried up this big pancake. You can make little ones, but this is lazy cooking summer! Plus it’s just me eating it, so any extra leftovers will go to my best friend Brutus 😉

I added a bit of yum yum sauce to my bowl for the sauce. Delicious!!!

Jarred Marinade and Chicken Thighs

Hey there! It has been awhile! The end of the school year is crazy busy, and with only 2 weeks left, I honestly can say this is one school year I am happy to say good bye to. My oven also decided to die on me, so cooking was very creative and we ate out a lot and went through a lot of cereal and bagels 😉

This marinade was pretty yummy. Pour on chicken (about half the bottle for 4 large chicken thighs) and marinate for 30 minutes. Cook in the oven at 350 for about 40 minutes. YUM! Served with a side of shells and cheese and Steam-fresh mixed veggies because we are fancy like that!

Hope every one out there is having a great Mother’s Day weekend! We went to brunch today, I took a nap, got my Rebecca to vacuum,  and both girls to set and clean the dishes! Can’t wait to see what I can get them to do tomorrow 😉

Always thinking about my next meal…

Scene- 3 PM during my school’s fire drill thinking to myself- Hmmm, what are we going to do for dinner??? There is bacon the the fridge; lettuce and tomato from burger night; avocados, cheese, and eggs just like always. Oh, I forgot we have sourdough! BLT’S!

It was a bit diner style tonight in the Winkeljohn house. Becca and I were home tonight, and Rucks took Katie to Lacrosse, so we all ate at different times.  The girls ate leftover burgers; Katie with runny eggs and Becca with leftover baked beans.  😉 I really don’t mind being a short order cook every once in awhile.  They just know they can’t complain! img_5885-1
