Leftover Loving- Butter Chicken with Veggies

So I made this yummy meal out of leftover roast chicken (can use store bought rotisserie), sauteed veggies (mushrooms, onion, yellow and red peppers), leftover rice, and this yummy store-bought Indian Butter Chicken sauce.

I first cooked down 1/2 of a chopped onion, 1 small container of sliced mushrooms, and 1/2 of a sliced yellow pepper and 1/2 of a sliced red pepper- about 10 minutes. Then I added the cooked chicken and cold rice along with the sauce. It took about another 10 minutes to slowly warm all the way through.

You could sub the chicken with tofu, shrimp, lamb, or just add more veggies. These are the veggies that I had, but really you can sub any veggie here. If you had any leftover couscous or quinoa, that would be a great sub for the rice.

I challenge you to see what is in your fridge and be creative!

Meal Plan 7/6/16

The summers are pretty laid-back here. There’s really no plan for the day. We wake up late, eat some cereal, go to the pool, eat sandwiches, and then I try to find something around the house that I can throw together for dinner.

That’s how we like it.

BUT the last couple of weeks we have been in vacation mode, and our fridge and pantry were looking pretty bare. I decided to put together a meal plan and head to the store to slowly get our supply back up. Here is what we are planning to eat…

Tuesday-  Beer Battered Cod

Wednesday-Roast Chicken of sort sort….maybe  this recipe?

Thursday- Pork Chops…maybe these?

Friday- Steak Fajitas

I’ll let you know if I change these recipes. I love a good change up!

 

 

Fourth of July Fun!

This past weekend we took a little trip to North Carolina to visit some family for the holiday weekend. We had a great time!

The hubby flew us in an airplane he rented from the local airport.

We went to the Museum of Life and Science in Durham. It was pretty fun. img_4122

Yesterday we went to a local carnival. The kiddos had a blast! It was fun to watch them have such a great time.

Now that vacation is over, I will be beginning to cook more. I know these last two weeks have been minimal on the blog, but after eating out a lot, we are all missing home cooking.
