Friday Faves 12/11/15

Happy Friday, ya’ll! I hope you all had a great week!

It has been an emotional one for me. Yesterday was the anniversary of the  death of my sweet Lizzie. She would be 10 and had been fighting cancer since she was 4. That life was all our little family knew, so it was our normal. This past year we have been trying to get used to figuring out how to live our lives in a whole new way. It has been mostly amazing, but of course we miss our girl more than anything.

After Becca’s party, I went to yoga.  It was so weird going to a class in the middle of the day.

After yoga, I was starving, so I treated myself to an amazing Indian buffet for lunch.  I especially loved the lamb meat balls and the Cheese Paneer. I went back to the buffet twice! I tried EVERYTHING. Soup, salad, veggies, meat, and amazing sauces! Sweet, sour, spicy; I  loved every bite!

This weekend  brings Pilates, parties, shopping, cooking, eating, Barre, family pictures, and DVR catch-up. Hope you have a great weekend!

 

Weekend Wrap-up 12/6/15

Today was the perfect Sunday. Sleeping in, yoga, lunch with a good friend and my girls, and a lazy afternoon and evening. The weekend goes by too fast!

The girls and I had lunch with one of my work friends. We ate at a small restaurant called Adriatic Grill. It looks like it might have been a Subway at one point. They have Mediterranean type food. I looked up some info on them and it seems it is a Bosnian family that runs the joint. They were super nice, service was awesome, and I want to try everything on the menu.  I had chicken noodle soup, a lamb gyro, and we all shared dessert. Oven Baked Sole

Hey guys! I know it has been a while! I hope everyone had a great holiday! I had an awesome week off! I got to spend lots of time with my family, especially my girls, which I love ❤ We had lots of amazing days just the 3 of us and it was super special. We also hung out with lots of other family this past week and we all had a blast together!

Oven Baked Sole

Ingredients

4 Sole fillets
season liberally on both sides with salt, pepper, garlic salt, paprika
juice from one lemon
1/4 cup olive oil

Directions

Preheat oven to 375
Season sole and marinate with lemon juice and olive oil
Put in aluminum foil or parchment paper packets
Cook for 18 minutes.

Serve with your favorite sides. I did broccoli, creamy noodles, and crescent rolls (DUH!)

Stuffed Shells and Some Shenanigans

Hey guys! It is so weird not typing out a new blog every day or so. The kitchen is coming together! The floor and most of the electrical is done! It looks so amazing!

This week the hubby is putting up some drywall and doing some other odds and ends to prepare for the cabinets to be put in next week. He has a few little helpers who have loved helping out here and there.

As for food, we have been going out, getting take-out, using the toaster oven and microwave, and actually have been cooking at a neighbor’s house a few times a week. I miss having my kitchen, but it will be worth it in the end.

Made some stuffed shells for the family a few days ago. They turned out delicious! I will be making them again, but maybe adding sausage or doing a vegetarian version.

Stuffed Shells –

Ingredients
1 container of Jumbo Shells
1 pound ground beef
1 onion chopped
1 container of mushrooms, sliced
1 large bag of Italian Cheese Blend Shredded Cheese
2 containers of pasta sauce

Directions

Cook your shells in a big pot of salted water. Let cool.
Brown your meat, onions, and mushrooms. Salt and pepper liberally. Let cool.
Stuff the shells with the meat and veggies. Cover with sauce and cheese.
Bake at 350 for 25-30 minutes.

Today we went to lunch at a yummy Dim Sum place. Katie loved it! Becca was not sold on it but loved practicing with her chop sticks!

Family Birthday Dinner

Last week was my birthday. The hubby and I went out to a fancy dinner and my parents babysat the girls. Last night we all went out for my family birthday dinner. We went to Red Lobster, which is a favorite by all. Mostly me who can eat seafood and cheese biscuits everyday of the week if given the chance.  Eating leftovers and who knows what else the rest of the week =)
