Butter Poached Tilapia

Hey guys! I made this the other night for the girls after cheer practice. It only took 10 minutes to make, but the girls and I devoured it in less than 3 minutes! I didn’t even take a before picture, because everyone was starving and it seemed so cruel to make them wait. It was pretty. It was delicious. And this was all that was leftover in the pan.

Butter Poached Tilapia

Ingredients
1/2 stick of unsalted butter
2 tilapia fillets
Salt and pepper, to taste

Instructions

Melt butter in medium saucepan over medium-low heat. Add fish and salt and pepper to taste. Cook on first side about 5 minutes. Turn and cook about 3-5 minutes more depending on the thickness of the fish.

Marinated Asian Tilapia with Soybeans and Couscous

Hope everyone is well tonight! After work, I headed to the grocery store. I didn’t have a whole lot of time to shop this weekend, so I decided to go by myself after work. The last two weeks I have shopped BY MYSELF on a Friday afternoon and a Monday afternoon. Both were pretty awesome. Yes, the store is a bit crazy with last minute dinner shoppers, but no one is doing a week’s worth of shopping in one trip. Plus, I have no kids or bored hubby weighing me down. I can get in and out  and do what I need to do in less than 30 minutes. Since I went to the store tonight, I went ahead and planned on making fish. It would be the freshest and would cook pretty quick. I had an idea in my meal plan to cook a breaded fried fish of some sort, but as I was putting groceries away, I had a new thought… Marinated Asian Tilapia.

Pretty simple to make…

Ingredients

3-4 pieces of Tilapia (I bought 2 and that was decidedly not enough as of tonight…3-4 next time)

marinade of a mixture of equal parts (about 2-3 tablespoons of each) of any of the following- soy sauce, teriyaki sauce, fish sauce, oyster sauce, hoisin sauce, sesame oil, and rice wine vinegar, minced ginger, and pepper

1 cup flour

3 tablespoons peanut oil (or vegetable oil)

Directions

Marinate Fish for 10-20 minutes

Shake off excess liquid and coat in flour.

Cook on each side for 3-4 minutes. The thinner ends will be very tender and flaky.

I accidentally bought the Steam fresh bag of edamame instead of snap peas. Turns out the girls love them and are begging for them for a snack to take to school! No leftovers…hubby was the only one who didn’t eat them! I also served with a side of couscous. Only a bit of couscous left, so maybe something for lunch tomorrow… no pics of the soybeans and couscous. All inhaled before I could take a picture!

Pan Fried Tilapia

You have reached the Wednesday night stretch.  You have had a few easy nights for dinner. Maybe you used the crockpot. You found some pasta and sauce for a quick pasta dish. There is always the favorite taco or quesadilla. Now you need a fast idea. Almost to the weekend…almost to Chinese Takeout and pizza night. You need a quick run to the store for dinner. I propose fresh fish, salad/veggie, rice/couscous, white wine, and a nice loaf of bakery bread. 7 minute store run and you are golden. Under $30 for a dinner for five including a decent wine for mom. Score!

Pan Fried Tilapia

Ingredients
4-5 pieces tilapia (or any white fish… cod, mahi mahi, sole,etc.)
salt and pepper
1 cup flour
2 eggs, whisked
1 cup breadcrumbs

Directions
Heat pan to med heat with vegetable or grapeseed oil (low smoking points)
FEB- Order to dunk your fish… salt and pepper each station
Coat each piece of fish in flour, eggs, and breadcrumbs
Place in oil about 6 minutes on the first side and 3 minutes on the second side
Golden brown yumminess should be present on both sides…

Only a chunk of one piece was leftover. I fed it to Brutus after the kitchen was cleaned. He lays perfectly still under the table during dinner and goes and lays down in his unlocked crate after dinner, so he deserved a bit of magic.

Tilapia with Pesto and Cauliflower Gratin

I have heard some people say they don’t like cooking fish because they think it will stink up the house. They think it is hard to make. Well, I am here to prove them wrong. It couldn’t be easier and the house smells amazing. I also made a spinach and basil pesto to go with the fish. It matched perfectly. There were no leftovers…

Pan fried Tilapia

Ingredients
2-3 filets of tilapia cut in half
2 cups of flour
salt and pepper to taste
a couple tablespoons of oil AND butter

Directions
Sprinkle both sides of fish with salt and pepper; coat in flour. In large skillet, heat oil and butter over medium-high heat; fry fish in batches, turning once, until golden and fish flakes easily when tested, 4 to 5 minutes.

Spinach Basil Pesto

Directions- Mix the following ingredients in a food processor and stream in olive oil to make smooth and creamy;
1/2 container of pine nuts
1 handful of both spinach and basil
1/2 container of parmesan cheese
2 cloves of garlic
salt and pepper to taste

Cauliflower Gratin

Ingredients

1 head cauliflower, cut into florets
Sea Salt and Pepper
3 tbl butter
2 tbl flour
1 cup heavy cream
1 cup milk
2 cups of shredded cheese- I used mild cheddar and colby jack

Directions

Place cauliflower on a cookie sheet sprayed with cooking spray. Generously salt and pepper your veggies. Toss and cover well all pieces with olive oil or cooking spray. Place in preheated 425 degree oven for 20 minutes. Turn to broil for the last 5 minutes to get the pieces golden brown. Meanwhile, prepare the sauce. Over medium heat, melt the butter in a large skillet. Add in the flour, stirring to make a paste. Continue stirring for about 5 minutes. Slowly add in heavy cream stirring and blending. Do the same with the milk. Reduce heat to low and add the cheeses a little bit at a time, stirring and allowing it all to melt. Add salt and pepper to taste.

Place roasted cauliflower in a large mixing bowl. Add creamy cheese mixture and blend well. Pour into a cast iron skillet and add more shredded cheese to the top. Bake for 20 minutes in a preheated 425 degree oven or until the top is golden brown.
