Friday Faves and Meal Planning 1/16/15

HAPPY FRIDAY!!!! So thankful for a 3 day weekend! I will be taking a moment on Monday to talk to the girls about the significance of the day and importance of such a great man and leader. It is not just a “day off” but a day to be thankful for one of the greatest men and inspirational leaders this country has ever seen. Our country is definitely not perfect, but I am hopeful that it will continue to improve everyday for ALL people who live in this great nation.

Since we do have a long weekend, I thought I would go ahead and make a meal plan for this week and go shopping after work. As promised, I do have a crockpot meal. I also want to challenge myself to make at least one new meal that requires a technique I have not done before. I know that this will be a tough challenge, but I want to push myself as a home cook. This week it is homemade empanadas.

Meal Plan 1/16/15

Sat- Meaty Lasagna- my parents took the girls tonight for a sleepover so I could have a Girls Night Out!!! So tomorrow I am making them dinner when they drop my sweet peas off.

Sun- Pork Empanadas- I am going to braise a pork loin in coke and soy sauce. Then I am going to make homemade dough. Then I am going to fill the dough with the meat and cheese. Jalapenos will be in some for the adults. The kids will get the mild ones.

Mon- Chicken Stir Fry with Chinese Noodles

Tues- Girls go to dinner with grandparents while I go to yoga and hubby goes to hockey. When I get home from yoga, I am making a “Mommy Meal”-  Something like risotto or a pasta of some sort…I bought some of those “fancy” mushrooms and wine, so we shall see =)

Wed- Crock pot Meal- Turkey Chili

Thurs- Leftover Night

Friday- Family Night Out!!!!! GREEK?????

Meal Plan 1/11/15

Happy Sunday! Hope everyone had a great weekend! There is a ton of food in the freezer that we have been stockpiling over the last month, so instead of going to the store and creating new dishes, I am having a cleaning out the freezer week. Here is our meal plan for the week…

Meal Plan 4/6/14

Spring Break!!! I am so excited to stay home with my girlies this week! Hope everyone is enjoying this sun and warmer weather. Good riddance, winter!

Monday- Braised Beef Short Ribs, mashed potatoes

Tuesday- Lemon Rosemary Chicken with risotto and broccoli
Stuff your chicken with a few halved lemons. Put rosemary leaves under the skin, and rub the bird with olive oil and salt and pepper. Cook on 450 for about 25 minutes. Drop temp to 400 for another hour or so. Mine ended up being undercooked, so I needed to add it in another 30 minutes. Always use a oven thermometer or a meat thermometer.

Weekly Meal Plan 3/16/14

This weekend was wild here at our house! Becca had her birthday slumber party here and it was fun and filled with giggly adorable girls who know how to party like 7 year olds! We made mini-pizzas, had cake, and ate lots of snacks throughout the night. This morning I made them eggs and sausage and filled the oven and toaster with Eggo frozen blueberry waffles and french toast sticks. My kitchen smelled like syrup for a few hours after that =)

I am trying all new recipes this week. Looking forward to lots of cooking and eating! What is on your meal plan this week????

Sunday- Pork in Milk, roasted potatoes, and sauteed brussel sprouts w/bacon

Monday- Beer Braised Sausage with tomatoes and onions on Rigatoni, broccoli

Also, making some veggie pasta sauce for lunch for me and a vegetarian friend at work.

Tuesday- Skirt Steak Tacos with cabbage slaw

Wednesday- Chicken Francaise

Thursday- Grandparent night! Only 1 1/2 months left of my class!!!!

Friday- Clean out fridge/pantry raid night

Meal Planning 8/24

Sat. T-bone steak, baked potatoes, veggie

Sunday- Girl’s night! When the husband’s away, us girls will play! Hubby has a late night, so I will let the girls pick dinner…can be waffles, Chinese food, pizza, Zaxby’s; who knows!

Tuesday- My parents are coming over to take care of the girls. My husband and I both have class, so probably something quick on the road or something late thrown together.

Wednesday- Ballet, gymnastics, Taekwondo. Busy night, for sure. Hamburgers are always fast and easy! We were supposed to have them a couple of weeks ago, but never got around to them. Not sure why…that is the thing with planning. Even if you get home, get busy, and decide to go to Schlotzsky’s drive through, you already have a meal for next week in the freezer!
