Homemade Shake and Bake

I thought, “Maybe I could make that recipe, but even better.” I did just that. I made my own version of “Shake and Bake” and added it to boneless skinless chicken breasts (you could substitute pork chops) with a plenty of salt and pepper and olive oil.

Homemade Shake and Bake- I eyeballed all these servings- Add more or less of what you want.

2 cups plain breadcrumbs
1 cup shredded or crumbled parmesan cheese
1 handful of chopped fresh herbs- basil, sage, marjoram, oregano
Mix together in a large zip top bag.

Directions

Preheat oven to 350.
I took 2 chicken breasts and salt and peppered them liberally on both sides. Then I covered both of them with olive oil. I added the chicken breasts to the zip top bag with the Homemade mixture and shook them up. The girls had fun with this part. I put them in a sprayed baking dish. Bake for about 45 minutes.

Pantry Raid sides- I served with steamed fresh broccoli (steam for 20 minutes in a steamer), a side of rice (boxed Zataran’s mild), and cheesy garlic bread (frozen).

Superbowl Party Idea- Sandwich Bar

Hey guys! Happy weekend! Normally there is no such thing as leftover bacon in our house, but today we had some leftover from breakfast. If you have any bacon in your fridge, may I suggest this idea for a great lunch or perhaps even a Super Bowl party idea??? Get the kids involved as well! They love this!

Sandwich Bar- In our case, a BLT bar- Not really rocket science…lay out bacon, lettuce(I used boston, but bibb or iceberg would be fine), tomato, toasted bread, and your condiments. You could even put out some cheese, sliced avocado, ham, turkey, sliced pickles, hot sauce, etc. to make a sandwich bar so anyone can make whatever sandwich they like!

Pizza Night 1/31/14

Happy Friday, y’all! So tonight we made pizza for dinner. It was perfect and delicious. We used Boboli already made, homemade pizza sauce (https://funfoodiefamily.com/category/pizzas-flatbreads-toasts/) from the oven, and our own fave ingredients to top it off; mushrooms, black olives, pepperonis, and leftover steak (from leftover steak kabobs like these… https://funfoodiefamily.com/2013/10/05/date-night-steak-kabobs-and-twice-baked-potatoes/. Of course, we cannot forget fresh grated mozzarella! These are the before pics, but too many hungry munchkins made me forget to take the after pictures! Family made pizza is always better than take-out!

Cheesy Bacon Cornbread

Happy New Year! I live in Georgia, and I am cursing the cold weather here. If you are reading my blog in colder parts of the country, Canada, or other colder areas, I am sorry to complain. It is 20ish degrees and windy and probably won’t snow anytime soon. I hate JAN. and FEB. in GA. It is cold, windy, cloudy, and rainy. There is not much sun and everyone is grumpy. To combat this, I tend to stay inside for about 2 months eating soup and drinking coffee, red wine, and hot tea. I have to go to work; sometimes I make it to the gym; mostly I stay under a blanket catching up on reading and drinking the above drinks.

I made this soup yesterday and have already had 3 servings. Basically, I cleaned out my fridge and freezer and combined them in my dutch oven with chicken stock…

Tonight, I made Cheesy Bacon Cornbread. It was easy. I just followed the directions for cornbread on the package of yellow corn meal and added 4 pieces of chopped bacon and a cup of Montery Jack cheese. Then I sprinkled a bit more cheese on the top. There was no carrot juice used…Rebecca and I shared a shot while we mixed the cornbread. =) Let the kids help you mix this yummy concoction!

Grilled Cheese with a Sunny Side Up Egg

This is a great easy comforting lunch on such a yucky day. The only thing better would have been a hot bowl of tomato soup with the egg on top- great for dipping your grilled cheese. Yum! But there is no way I am going on in all this yucky rain, so this is going to have to do for today. My girls love this, too!
