Date Night: Steak Kabobs and Twice Baked Potatoes

Date Night. I love being able to spend time with my husband on date night, but it can be costly. So tonight we made a pact. Date night will take place at least every other week. I will cook a meal he wants, and we will eat at home. By saving money going out, we get to eat at a fancy or hip place every month or so. Sounds like a great plan, right? I will blog about date night each time. It will usually be Friday night, but it may be some Saturdays instead. I am pumped!!!

Steak Kabobs- We went to the local butcher shop and got these already made. They would not be too difficult to make myself, but, hey, date night needs to have a few shortcuts, right? Steak chunks and cut peppers and onions. I cooked for 2 1/2 minutes on each side. Then I took off the heat and turned a few times in the hot pan. Then I took them out and let them rest for 10 minutes. PERFECTION!

Twice Baked Potato:
Cook the potatoes (3 large, 6 small) in a 400 oven in aluminum foil about 45 minutes. Cook about 4 pieces of bacon. Once your potatoes have cooled, take out the potato filling leaving the skins. Mix in 2 tablespoons of butter, 3 tablespoons of sour cream, and all your chopped bacon. Spoon into skins. Add shredded mild cheddar on top. Put back in a 350 oven for about 15 minutes or until the cheese has melted all over the top.

Sunny Side Up Eggs and Sausage

Happy Saturday! This morning I made sausage links, runny eggs, and buttered toast! Always an easy and fast breakfast!
For the sausage I just followed the directions on the back of the package. For the eggs, I started with 3 tablespoons of butter in a hot pan. I made 10 eggs (2 batches) for the 5 of us. I cooked the eggs for a few minutes until the bottom set, then I took them off the heat and covered them for about 2 minutes to cook the whites on the top. Perfection!

Tomato Tortilla Soup

I took the rest of the sauce and pureed it in a blender with a bit of chicken stock. That was my soup. I heated it on low while I fried up my tortillas. I took vegetable oil and cooked it on medium heat while I sliced up about 5 tortillas in to strips. I tested the oil with one strip. You could use a meat/candy thermometer to get the oil up to about 350-375. If not, when you put the test strip in the oil, it should immediately start to bubble. Cook until golden brown, less than a minute. Babaysit them or they will burn. I poured myself a bowl of soup and topped with tortillas, sour cream, and shredded cheese.

The Mexican culture apparently has different recipes for Tortilla Soup. Each family (and sometimes different family members) makes it different, so there is no one right way. If I had some avocado I would slice some on top. It has been a rough week, so this soup was so warm and comforting!
