It has been a LONG time since I have posted one of these! For those new to the blog or  those who may have forgotten, these are posts about things I want to show you that I am loving in my life. They may be products I am trying for the first time, things I have loved forever, or things I am lusting after that I just want to have. Most have to do for food, but nothing is off limits. Here are the things I am loving this week…

BBQ CHICKEN PIZZA

Yesterday I was in the grocery store and saw this…img_0985

I had already grabbed the BOGO chicken breasts, so I immediately grabbed these and knew I wanted to make BBQ chicken pizza.img_0989

First I preheated my oven to 425. I cooked the chicken breasts in a cast iron pan with some salt, pepper, onion powder, and garlic salt. Once it was cooked through, I cut it,  put it in a bowl, and covered it with a bit of barbecue sauce. Then I put a bit of BBQ sauce on the pizza dough. img_0987

I covered it with the entire package of cheese and as much chicken as possible. There was a bit of chicken left, which I am thinking of a lot of good leftover ideas…

I baked it at 425 for  about 15 minutes on the paper I unwrapped the pizza dough in. img_0992

I transferred it to my cutting board where 3 adults got 2 pieces each and 2 kids got one piece each.  While we were full, next time I might try two different pizzas; Who doesn’t love leftover pizza?????  Now that we had this crust, I am not sure we will ever do frozen or cheap takeout again…  img_0994

Meal Planning Jan. 21-27

Just last week it was snowy and an icy 14 degrees here in Georgia; today it is 68 degrees and gorgeous! It has been a pretty relaxing weekend so far. We took the dog to the park and played outside in the lovely weather a bit. I went to the grocery store BY MYSELF, which was pretty fantastic. I went with ideas of what I wanted to do for meals this week, but I decided to see where the sales were, especially in the meat section.  I got most of the food for the week in my trip, but I will need to go back  Wednesday or Thursday for a few more things. Have a great evening!

Chicken Sausage and Veggie Lasagna

Evening guys! I made this meal the other night for me and the girls. My husband hates ricotta and is not a fan of chicken sausage, so he was working late and I knew it was time to get a little ricotta in our lives =)

This is pretty much just like a lot of the other weeknight lasagnas I make like this one. Using no boil noodles is the key for fast lasagna. I did use a small can of diced tomatoes that I added to a jar of pasta sauce with some sauteed onions, garlic, and spinach. Since the girls are not big fans of spinach or chucks of tomato, I blended them together with the jar of pasta sauce. I don’t usually have to trick my kids in to eating veggies, but I am not opposed to it at all.

I usually use ground beef or pork, but I found these chicken sausages on sale that I took out of the casing and browned. Shhhhh!!! They had kale in them, which they never noticed because of all the layers of pasta and cheese!!!!!  😉

Beef and Pork Chili

It is super cold here in the south! I made this a couple of days ago to help warm us up. We loaded it up with cheese, sour cream, crackers, and Frito scoops. Delicious!

Ingredients

about 1 1/2- 2 pounds ground meat (I used ground pork and chuck)
1/2 onion
1 can of pinto beans
1 can kidney beans
2 small cans of diced tomatoes
1 small can chopped green chilies
4 tablespoons Worcestershire Sauce
2 tablespoons tomato paste
4 tablespoons chili powder
2 tablespoons garlic powder
4 tablespoons cumin
1 tablespoon paprika
1 1/2 teaspoon ground cayenne pepper
1 1/2 teaspoon red chili flakes
1/2 container of low sodium beef broth
1 teaspoon dried oregano
salt and pepper to taste

Directions

Brown the meat and onion in a large dutch oven over medium-high heat with all of your spices. Add in your tomato paste and Worcestershire sauce and stir well.

Add in your tomatoes and green chilies and stir together. I actually blended them first, because the girls don’t like pieces of tomatoes and green chilies, but you can crush them or leave them whole if wanted.

Add in your beans (rinsed) and stock. Stir and turn to low. Simmer at least 1 hour, but the longer you cook it, the better it tastes. Especially leftover chili the next couple of days!
