I did a bad, bad thing ;)

I learned how to perfect a baked potato… in an air fryer! Potatoes covered in avocado or canola oil covered in course salt. These are good high smoke point oils, which means they can be cooked at high temps without burning. Course sea salt, because potatoes and crunchy salt are besties. Cook at 400 for 40 minutes flipping at the 20 minute mark. Once done, cool for just few, then break open these bad boys for the rest of the party! Tons of butter, cheese, and sour cream. We were not even mad that bacon didn’t show up. Such a show off! No potato skins left behind!

Air Fryer Chicken Parmesan

Loving my Air Fryer. No story here. Just the food.

Ingredients:

  • 3 chicken breasts, beaten flat, salted and peppered on both sides
  • 1 cup flour, add a sprinkle of salt and pepper
  • 4 eggs, lightly beaten, add a sprinkle of salt and pepper
  • 1 cup Italian breadcrumbs, add a sprinkle of salt and pepper
  • 1 container of your favorite sauce
  • Shredded Mozzarella or fresh slices

Instructions:

  • Set up three shallow dishes. Place flour in one, eggs in one, and Italian Breadcombs in a one. Season each with a sprinkle of salt and pepper. Coat the chicken with the F.E.B (Flour, Egg, Bread crumb) mix.
  • Spray basket with non-stick cooking spray. Place 1 1/2 coated cutlets in air fryer basket. They don’t all fit, so you have to cut the third cutlet in half.
  • Cook on 350ΒΊF for 10 minutes on first side. Turn over chicken.
  • Spread 2 Tbsp spaghetti sauce on each piece of chicken and top mozzarella cheese.
  • Cook on 375ΒΊF for 6 minutes longer or until chicken is 165.
  • Repeat with second cutlet batch.

Sunday Baking Fun

I spied a few sad browning bananas on the counter, so I decided to have a little baking fun. I made two different recipes; chocolate banana bread and blueberry banana muffins. I may have gone a little crazy, but luckily I have an awesome neighbor whose family loves to taste test my creations πŸ˜‰

BLUEBERRY BANANA MUFFINS

Ingredients

  • 1/2 cup unsalted butter, melted and cooled slightly
  • 2 eggs
  • 1/2 cup milk
  • 2 cups flour
  • 3/4 cup plus 1 tsp sugar, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 ripe mashed banana
  • 2 1/2 cups fresh blueberries

Preparation

Heat oven to 375Β°. Line a muffin pan with paper liners or use non-stick cooking spray. Whisk butter, eggs and milk in a bowl. Combine flour, 3/4 cup sugar, baking powder and salt in another bowl. Stir wet ingredients into dry ingredients; fold in blueberries. Divide batter evenly among muffin cups; sprinkle with remaining 1 tsp sugar. Bake until muffins are golden brown and a knife comes out clean, 25 to 30 minutes. I always say let them sit and cool, but really the girls and I will eat one fresh out of the oven and risk burning our tongues πŸ˜‰

CHOCOLATE CHIP BANANA BREAD

Ingredients

2 cups flour
2 tsp baking powder
1/4 tsp baking soda
1 tsp salt
2/3 cup sugar
1/4 cup canola oil
2 large eggs
1/3 cup 2% or whole milk 1 tbs vanilla
2 ripe bananas
1/2 bag chocolate chips

Directions

Preheat your oven to 350 degrees

Prepare a loaf pan with non-stick spray

In a medium bowl, combine your dry ingredients

In a large bowl, combine your wet ingredients

Pour the dry ingredients into the bowl with the wet ingredients and mix by hand just until combined.

Bake at 350 for 50-60 minutes or until a toothpick or cake-tester comes out clean

Cheesy Steak Sandwiches

Happy Sunday! Hope everyone is having a great weekend! Today the hubby is smoking some ribs, so we have that to look forward to tonight for dinner! Last night I made these Cheesy Steak Sandwiches, except I cooked the meat apart from the veggies. Now that the girls are getting older, they are actually getting more outspoken about what they like and what they don’t like. I made their sammies with just meat and cheese. I also cooked some frozen tator tots in the air fryer for about 12 minutes. So yummy! I will bake fries or tots in the oven again!

It was so filling that I could only eat half. That just means leftovers for anohter day!
