Fish Tacos 2 Ways

Howdy kids! So if you read my meal plan for the week, you saw tonight was fish night. The girls ate their fish sticks, Annie’s Mac and Cheese, and corn. My hubby wanted to have a fish (tilapia) taco to go along with his leftover Mexican chicken dish. I made myself some salmon and pesto. Good enough on its own, but seeing those tortillas made me want to experiment with salmon tacos. I truly believe that you can make anything into a taco..challenge accepted!!!!!

Tilapia Tacos

1 piece of tilapia- mix 1 teaspoon each of salt, pepper, cumin, and chili powder- mix well and add to both side of the fish. Add oil to a med. hot skillet. Cook about 4 minutes on both sides.  You should end up with nice flaky fish.

Add to your tortilla and favorite toppings.

Salmon Tacos with Pesto

Yeah…you are just going to have to trust me on this…

1 piece salmon- salt and pepper each side

Pan fry in a bit of oil. Cook skin side down for 4 minutes. Turn over for another 4 minutes. You should end up with a nice pink center and flaky flesh. YUM!

Spinach Pesto

Directions- Mix the following ingredients in a food processor and stream in olive oil to make smooth and creamy;
1/2 container of pine nuts
1 bunch spinach
1/2 container of parmesan cheese
2 cloves of garlic
salt and pepper to taste

Friday Faves- 1/9/15

It has been a long time since I have done one of these! I know I said the same thing about my weekly meal plans, throwback Thursday, and many other things.

Everyday is weird. I wake up, get the girls up and off to school, and go to work. I come home and cook dinner,  go to the gym or yoga, read, watch TV, and go to bed. Normal. Normal, but strange and foreign to me. Every day we move through life and try to make the best of what we have and cherish it all. Like I said before, we are trying to live life to the fullest and make our lives count. So that is what we are doing.

So that being said, here are a few things that I have been loving and looking forward to this week…

downloadMy goal is to read at least one book a week. This one was pretty freaking awesome. Crazy, disturbing, and wild. If you haven’t read it, you should. I’m looking forward to watching the movie when my mind is in the right place for it. Right now I am reading Catching Fire (3rd time). Next week, I hope to begin reading Wild before I go see the movie for it.

Vinyasa-Yoga

My workouts—–Vinyasa Yoga- This is  usually a faster paced yoga. The  assanas (postures) flow  together in a series of movements that are synchronized with the breath. I love it! I got a Groupon for a local Pilates studio, so I have been checking out a lot of their classes. Vinyasa is one of them, but I have also taking some other fun and challenging Pilates classes. I have until the end of the month with that Groupon, then I will try something new. I also have my tried and true gym that I mix it up with. They have a day care there, and the girls love to go with me.

Date Night!!!

So we all love that, right? My gym also has a pretty cheap date night from 6-10 every Friday night. We have not been able to go for a long time, but now we will definitely start going back more often. Tonight we are going to try a new Sushi place. I am super excited!

Crock Pot Beef Stroganoff

Hey there! Happy Thursday!

Wait? WHAT??? Is it only Monday? Darn it! I thought for sure we were at least to Thursday. Oh well…

All kidding aside, I decided to try to make at least one crock pot meal a week, especially on a crazy weeknight. I plan on making more meals in my crockpot these next couple of cold and crappy months. As my friend Bonnie calls it, JanFeb. JanFeb. is a summer loving beach bum’s worst nightmare. When I am dreaming of bikinis and flip flops, JanFeb. wakes up my warm blanket smothered body and slaps me in the face with ice and wind. I actually have to leave my warm bed and freeze my butt off the rest of the day. Blah! Eat some of this…then go to the gym in case you still want to fit in that bikini…

So today, Monday, Jan. 5, I decided that I will use my crock pot at least once a week. I am not even going to bother putting it back under the counter. Be on the lookout for for more crock pot recipes these next couple of months.

This one of my family’s favorites.  I tried to take a better end picture as well, but no such luck. I actually find food from crock pots very hard to photograph. Everything has cooked all day together and mashed their flavors together. Good for your tummy, but not really photogenic. Maybe one day I will be able to capture a perfect picture of it!

But until then, these cute little sous-chefs make up for it!

Easy Beef Stroganoff

Ingredients

Beef sirloin cut into chunks or strips
salt and pepper, to taste
3 tablespoons butter or margarine
1/2 lb fresh mushrooms, sliced in half
1 medium onion, sliced or diced into medium sized pieces
1 bag frozen pas
2 tablespoons all-purpose flour
2 cups beef broth- reduced sodium or so sodium is best
2 tablespoons of Worcestershire sauce
3 crushed and finely diced garlic (or 1 tablespoon garlic powder)
1 package of cutup cream cheese (room temp.) or sour cream (or a combo)
1 package wide egg noodles
Season the beef with salt and pepper and let stand (in refrigerator) as you prepare the other ingredients – let stand for up to two hours.

Directions

Brown the meat in your pan. Let it cool and add it to your crock pot. Cook your chopped onions, garlic, and sliced mushrooms in the beef drippings with a few shakes of olive oil. You can prepare this part the night before and put in your fridge until the morning.

In the morning, add your Worcestershire sauce and beef broth. Cook on low for 6-8 hours or high for 3-4 hours. Near the end, add your peas. Make a slurry by whisking your flour and a tablespoon of the liquid from the crock pot together. Add that and your room temperature cream cheese (or sour cream, or combo of each.

Cook egg noodles and add all together at the end.

 

Spaghetti Alfredo with Shrimp, Bacon, and Veggies

Happy Sunday! Today was a pretty lazy day. We all slept in, went to the grocery store (been a long time, so our cart was overflowing), watched TV, played, and read. I cooked this yummy dinner.

I knew I wanted to make some kind of shrimp pasta possibly with Alfredo sauce. This was not your ordinary pasta Alfredo. I hope you give it a try one night!

Spaghetti Alfredo with Shrimp, Bacon, and Veggies

Ingredients

1/2 onion, chopped
4 cloves garlic, crushed and minced
1 head of broccoli, just the florets
1 container of mushrooms, sliced
6 sliced of bacon, cooked and chopped
1 pound of shrimp- peeled and deveined
1 container of Alfredo sauce or make your own- https://funfoodiefamily.com/2013/09/02/shrimp-and-broccoli-angel-hair-alfredo/
butter, 1/2 stick
olive oil, 1/2 cup
salt and pepper to taste

Directions

Heat a large skillet and cook your bacon. Once done, set aside and drain on a plate with paper towels to soak up oil.

Add a table spoon of butter to your bacon fat. Cook your chopped onion on med.-low heat until soft, about 5-6 minutes. Add your garlic and cook about 3 minutes more. Add your broccoli and mushrooms. Add a few more turns of olive oil. Add some salt and pepper. Cook down about 15 minutes or so. I like the broccoli to still have a bite to it and be bright green. Cook to your preference. Season to your preference. Add your Alfredo sauce and combine. Turn to low.

Meanwhile, Bring salted water to a boil and cook your pasta.

Saute your shrimp in another pan. Cook about 4 minutes and add to your sauce. Add the pasta to the sauce. Add a bit of starchy pasta water if needed. Mix to combine. Chop bacon and add on top. Perfection!!!! Teach cute little shrimp lovers how to take off the tails!
