Margarita Naan Pizza

I have been looking forward to this night way too much. I knew my husband had to work late. I knew the grandparents were picking the kids up and taking them to dinner. I knew my Thursday afternoon schedule was finally back to normal. What does this mean? Mama has the whole house to herself for at least 2 hours! My plan was simple. Leave work. Stop and buy a bottle of wine (I ran out Monday when one of my besties from college helped me polish off my last bottle of Pinot Grigio). Come home and create a yummy pizza with ingredients already in my fridge. Drink said wine while cooking said pizza. Drink said wine while eating said pizza while watching TV in more than normal amounts. SILENCE IS GOLDEN!

Margarita Naan Pizza- so simple…1 piece of Naan bread, a tablespoon of my leftover sauce minus the meatballs (you can totally use a shortcut and buy your favorite homemade sauce) https://funfoodiefamily.com/2014/05/14/meatball-subs/, sliced mozzarella cheese, fresh basil. Cook at 500 for 10 minutes. Then I turned the oven to high broil with the oven door open for 5 minutes. Perfection!

Meatball Subs

I am always looking for ways to cook make ahead meals. This sandwich is a great idea for just that. I did all the cooking last night(meatballs and sauce- total time just under 2 hours), but when I got home tonight dinner came together in a snap. After dinner last night (fish, couscous, and broccoli) I went ahead and prepped dinner for tonight. Tonight, I prepped dinner for tomorrow night (chicken pot pie). Saves me the stress of the dreaded, “What is for dinner? When are we eating?” I can answer those questions pretty fast most nights thanks to make ahead meals.

-Meatball Sauce-

Ingredients
1 28 oz. can of crushed tomatoes
3 squirts of tomato paste (or 3 tablespoons if you have a can).
fresh herbs chopped- oregano, basil, parsley, and thyme
1/2 chopped onion
1 container of mushrooms,sliced
1 can of black olives
2 carrots chopped
2 stalks celery chopped
2 garlic cloves, crushed and diced
2 tablespoons or so of Worcestershire
2 tablespoons butter
2 tablespoons sugar.
salt and pepper to taste
meatballs- from ground beef- directions below

Directions

Take all your chopped veggies and cook them down about 8 minutes on med.heat.
Add your garlic and tomato paste and cook for 4 more minutes.
Add the rest of the ingredients and stir. Cook for 30-45 minutes on low heat. The consistency should be on the thick side since it is going to be part of a sandwich.
Add in your meatballs. Cover and cook on low for another 45 minutes. Here is how I made mine…

I used 1 pound of beef, 1/2 cup parmesan cheese, 1 cup bread crumbs, 2 tablespoons Worcestershire, 1 teaspoon of onion and garlic powder, chopped parsley, oregano, and basil. Mix it all up and make some meatballs.

For the sandwich- Split open a hoagie roll and add in lots of meatballs and sauce. Top with mozzarella cheese and bake at 350 until bread is crispy and cheese is melted. Top with basil.

Spinach and Cheese Omelet
Ingredients

A whole container of spinach- you could use frozen that you thaw, but you have to make sure you get out all that excess water
2 whole eggs- if you are watching cholesterol or fat, you could use 3 egg whites
a handful of shredded cheese- whatever you like
salt and pepper to taste

Directions
Saute your spinach in some oil or bacon fat =)
Whisk your eggs and pour them in a small pan that you have sprayed with Pam or melted butter or bacon fat =)
Shake the pan around a little to make sure most all of the egg gets cooked. Then put in your spinach and cheese. Fold it up and top with cheese. Cover to melt the cheese. I added a dash of hot sauce for some spice.

I have fond memories reading this book in AP French class almost 20 years ago now! Wow! I am getting so old! Now I just stick to the English version. My French is a bit rusty.

My Pets-

Pumpkin- my one-eyed pirate kitty. He is 13 years old and was my first baby. Such a snuggler. I have another orange Tabby cat, Oscar. He is pretty sweet when he feels like it.
