Oven Roasted Cheese Poblanos

Hello again! Almost time for bed, but I thought I would go ahead and post one more time tonight. I made these for lunch tomorrow, and I cannot wait!

Oven Roasted Cheese Poblanos

So easy! I sliced 4 poblanos in half and took out the seeds and ribs. Then I filled them with cheese and roasted them for about 30 minutes.  I am going to put them over refried beans and add some sour cream and avocado to the mix.

Crockpot Spaghetti Squash

Evening guys! I thought I would share this amazing tip… cook spaghetti squash in your crock pot! I saw this tip the other day on TV, and I just had to test it out!

Crockpot Spaghetti Squash

Ingredients
1 large spaghetti squash
1 cup low-sodium chicken stock, vegetable stock or water

Directions
With a sharp knife or fork, poke your spaghetti squash a few times all around.
Place the entire squash in a large slow cooker. Add your liquid and cover.  Cook on high for 3-4 hours or on low for 6-8 hours.

I am going to add some butter, Parmesan cheese, and possibly some leftover veggies from tonight’s dinner (recipe coming soon) and take for lunch tomorrow!

Leftover Loving- Veggie Pasta Salad

Evening guys! We all finally got home about 8:30 tonight. The girls both had cheer practice, but in different places, so it was a bit crazy. We made it work, but we got home late.

We usually give the girls a light dinner  about an hour before practice; sandwich, quesadilla, eggs and toast, etc. Since this is the first week of school, they are extra hungry.  So I let  them have a snack when they come home from practice.

After that they get ready for bed. Hopefully any homework that needs to be done is done. I’m really hoping that they get their homework done in their after school program. I will definitely help with whatever they need, but there is only so much time.

So tonight I made this concoction. All I did was take leftover pasta and mix it with leftover veggies ( spinach, orange pepper, and carrots), black olives, chopped bacon, and a tiny bit of Caesar dressing that was at the end of the bottle. So easy! You could totally add whatever veggies, protein, or dressing that you have leftover.
Add in your favorite cheese and veggie dressing for a vegetarian option.

Leave out the meat and use balsamic vinegar for a vegan pasta. So many endless options!

One Pot Vegan Meal-Veggie and Rice Stew

Evening guys! Today was an amazing first day of school. My kids were so cute and I think this year is going to be pretty special.

It has been a super busy day, like I knew it would be. I actually made this last night. This is a one pot vegan meal, so feel free to add meat, beans, or cheese if you so choose!

I took all my veggies from the farmer’s market and sliced them up; eggplant, peppers, squash, okra, tomatoes, and an onion.

First, I heated up a couple tablespoons of olive oil. I sautéed my onions for a few minutes before adding the rest of the veggies. I also added a glass of white wine – Pino Grigio. I stirred them all together then added 2 small cans of diced tomatoes. I added 1/2 cup of rice. I stirred occasionally adding more liquid (wine, veggie stock, or water) when needed.

I cooked until rice was done, about 20 minutes.

Just Another Summer Pasta Salad

Summer is not ending, but for some reason we still officially have to go back to school in a couple weeks. Why is it that in August, when Georgia is at its highest heat factor and level of humidity, we have to go back to school. Most schools in the north don’t go back until September. I would think that the school systems would want to save money on air condition. Can you imagine how much money they would save? But no, we have to go back in August. Boo!

Ok, so rant over for now. I was craving a nice summer pasta salad, so I threw this together for lunch. About 2 cups of pasta cooked (whatever you have on hand), a handful of grape tomatoes from my garden cut in half, one small can sliced black olives, 3 tablespoons of olive oil, a tablespoon of Italian seasoning, and a little onion and garlic powder. I also added some feta cheese. Delish! Plenty of leftovers for a few days!
