Balsamic Tomato Bruschetta

Stuck in a lunchtime rut? This week I have had cheese and Triscuits almost everyday for lunch. So today I came up with this easy beauty. Bruschetta- pronounced bro͝oˈsketə/- or sometimes by Americans- bro͝oˈshetta is a toasted Italian bread drenched in olive oil and served typically with garlic or tomatoes. You can really top it with anything you like, but this garlic and tomatoes are the norm. We also make this sometimes with mozzarella, tomato, and basil. No matter how you say it or prepare it, these yummy toasts are quite satisfying for a snack, lunch, appetizer, or side dish for dinner. I served with mine with a side salad.

Balsamic Tomato Bruschetta

Turn oven on broil. Take some sliced baguettes, rub on some garlic. Drizzle on some olive oil. Top with sliced or chopped tomatoes that have been lightly dressed with some Balsamic Vinegar. Cook for just a few minutes. Keep your eye on these guys so they don’t burn. Add to a side of pasta, salad, or just enjoy as a snack!

Avocado and Sunny Side Up Eggs on English Muffin

This is a simple and delicious breakfast that took no time to make. I toasted a whole wheat english muffin, spread some avocado (actually, it was a 100 calorie package of Wholly Guacamole, but same idea), and topped it with perfectly cooked sunny side up eggs! You are not going to get this at any drive-thru!

Grilled Chicken Caesar Wraps

Another snow day! I am ready for winter to be over, but since I am stuck at home, I can at least make a healthy lunch for my family! My husband got the idea at the store the other day to take this to work for lunch, but since we are home, we all got to enjoy.

I butterflied and grilled up some chicken breasts on my cast iron stove top grill. These are a great investment for grilling in the winter. Then I sliced up some romaine lettuce and warmed up some Naan bread (you could use pita, flat bread, or tortilla) on the eye of the gas stove. I sliced up the chicken on the cutting board. My husband and I built our sammies and topped it with Caesar dressing.

I served the girls “deconstructed,” because the girls are not really into lettuce or dressings, but we make them try everything at least once each time at the table. Lizzie is beginning to get the taste for lettuce, so hopefully the others will come around.

Leftover Lettuce Cups

Here is another idea on how to use up your leftovers; Lettuce Cups! These are a nice healthy way to use up leftover meat or veggies you have hanging around. Yesterday, I had the idea to make a snack with some leftover ingredients from my sandwich bar; bibb lettuce, tomato, bacon and a touch of mayo. A BLT without the bread! Today I made 2 lettuce cups with leftover Mexican steak and veggies topped with cheese and sour cream. A fajita without the tortilla!

If you are looking for a healthier alternative to bread, this is a super healthy idea. Even if you are not but just want to try something new, this is a delicious way to change it up. You could bag up all the ingredients individually and take this to work for a fast and easy lunch. I am even thinking of doing this with egg salad, chicken salad, or even roasted veggies to make a vegetarian meal. The options are endless! I hope you try this and enjoy!

Superbowl Party Idea- Sandwich Bar

Hey guys! Happy weekend! Normally there is no such thing as leftover bacon in our house, but today we had some leftover from breakfast. If you have any bacon in your fridge, may I suggest this idea for a great lunch or perhaps even a Super Bowl party idea??? Get the kids involved as well! They love this!

Sandwich Bar- In our case, a BLT bar- Not really rocket science…lay out bacon, lettuce(I used boston, but bibb or iceberg would be fine), tomato, toasted bread, and your condiments. You could even put out some cheese, sliced avocado, ham, turkey, sliced pickles, hot sauce, etc. to make a sandwich bar so anyone can make whatever sandwich they like!
