Creamed Spinach

1 tablespoon of bacon grease
3 cloves crushed and chopped garlic
1 large container or bunch of fresh spinach (I used a large container of baby spinach)- cook down add salt, pepper, and onion powder
Add a couple of tablespoons of cream cheese, melt down for a minute or 2.
Take off heat and add 1/4 cup heavy cream

Taco spaghetti

Sounds weird. Putting it together was weird. Once cooking, smelled delicious. Came out beautiful. E high fives me. I kinda saw another recipe like this named taco spaghetti. Italian- Mexican fusion. Thinking you could make this vegetarian with black beans instead of meat. My husband was still weirded out by the combo, but he still cleaned his plate. Plus, more in the freezer for another night in the near future!

Jimmy John’s Veggie Sandwich

Usually when I go to different restaurants, I get something different each time. At sub shops, I usually stick to the Veggie. Sometimes at Publix, I may get turkey, but for the most part, it is a veggie sub all the way. My favorite is Jimmy John’s on whole wheat. So good!

I wanted a vegetarian omelet, so I made one with goat cheese and sun-dried tomatoes.

My husband made himself a pretty yummy frittata. Of course, I had to have a taste. I am kind of like a hobbit; I eat first breakfast and second breakfast any time I can.

Panzanella Salad

This time, I followed the same recipe with the bread, basil, tomatoes, and mozzarella. I added garlic (last time I was out), black and green olives for an extra salty bite, and balsamic vinegar. One of my favorites of all time. So yummy!
Instead of olives, you could also use capers.

You can use this as an appetizer, salad, or make a big plate for a vegetarian meal. Or you could add chunks of roasted chicken and it will still be super healthy! Add a nice glass of wine to round out your meal! Mange!
