Oxtail and Mojitos

Date night! The hubby and I chose a local Cuban spot, Havana South, that has amazing dishes. Everything I have had there has been great; Cuban sandwiches, Paella, crab-stuffed fish, and marinated pork chops. I have been eyeing the oxtail the last couple of times, and tonight I decided to go for it! 002

This dish did not disappoint! Fall off the bone, melty, rich meat; Perfection! It came with 3 oxtails, pretty tasty black beans, and probably one of the best restaurant rice out there. I hardly ever eat the side dish rice. 003

The hubby got the garlic chicken, and it was delicious as well. I saw a sign for mojitos when we first walked in, and each table we passed all had at least one. Of course, I had to get one! Great dinner out! Lots of food for your money; Leftovers for the weekend! Cheers to the freakin’ weekend!

Shrimp Alfredo

Ring, Ring… I answered.
“Hello?”
It was my mom.
“Hey, how are the girls? How was their day?” How is E?”
“Good. Good. Good. Where are you?” I could hear lots of noise in the background.”
“At church. We just had dinner. It was a shrimp boil. There are 4 pounds of shrimp leftover. Can I bring them tomorrow night for dinner? Can you do something with them?”
“YES!!! I’ll think of something! Bring them!”

I asked the girls what sounded good with shrimp, and they all said cheesy Alfredo pasta. Cool. 001002

My husband wanted to make pasta…always a good thing. I sautéed most of the shrimp in butter. Cook on both sides until pink…just a few minutes. When it turns pink and curls up, it is done. I also boiled the rest with a bay leaf and lemon juice. Those were for cocktail sauce.

No…no homemade Alfredo sauce. Tonight I chose the next best thing…Mario Batali jarred Alfredo sauce.

I saw this recipe on Pinterest, and I remembered I had some quinoa in the cabinet.

I added this recipe to a pile of crisp lettuce and added cheese, fresh avocado, sour cream, and taco sauce. I didn’t make the dressing, because I wanted the chunky avocado for texture, and had the taco sauce and sour cream for my “dressing.” Love the idea for this dressing, though.

This was delicious and super filling. You could add some taco chips or make this into a taco filling.

Easy morning frittata

I love frittatas. You can put anything in them. You can add leftover veggies, meats, cheeses; you can add any flavor combination you like. I added sliced onions and mushrooms and softened them up a bit. Then I added some sliced ham to warm it through. Then I added them to 6 whisked eggs and poured them back in the pan. Finally, I added sliced kalimata olives and goat cheese to the top. I cooked it on the stove top for a few minutes until the bottom is set. Then I put it in the oven on broil until the top was done, about 3 minutes. This was a great combination!
