Sweet Braised Pork Empanadas

Hey guys! Happy Sunday! On my meal plan this week I had empanadas. I had wanted to make the dough, but remembered that my trusty food processor had bit the dust. Luckily, I had some back up puff pastry in the freezer, so I rolled with it. This was pretty yummy; sweet and a bit spicy. I made half spicy and half non-spicy. The hubby had the spicy and the girls and I had non-spicy, but I added some hot sauce and jalapenos to my sour cream, so mine had a nice kick to it. I think next time I will do beef or chicken with a different seasoning. Hopefully by then I will have a new food processor and can make homemade dough.

Sweet Braised Empanadas – I got this recipe from http://www.dinneralovestory.com/coke-braised-carnitas/ and tweaked it a bit. Was meant for carnitas, but I thought it would still be amazing in an empanada. I was right. =)

3 pounds pork loin
2 tablespoons peanut oil (olive oil is fine if you don’t have peanut)
2 cans coke (or enough to go half-way up the pork)
1 tablespoon hot sauce or Sriracha
2 tablespoons soy sauce
1 container of beef broth

Preheat oven to 325°F. Over medium-high heat, brown pork in peanut oil in a Dutch Oven on all sides. (Don’t skimp on this part. You want a nice brown crust.) Add remaining ingredients and bring to a boil. Cover and place the pot in the oven with lid slightly askew. Turn every 30 minutes or so, and remove after about three hours. Remove pork from liquid and shred on a cutting board using two forks. Place pork in a bowl or platter as you go. Toss with a little bit of the braising liquid — just a little, it’s very sweet.

Defrost some puff pastry. Cut in squares. Add a spoonful of pork and shredded Mexican cheese. I made half of them spicy- I added a couple of shakes of hot sauce and some diced jalapenos. For the non-spicy, I just added the pork and cheese. I brushed all with an egg wash and poked them with a fork.

Becca really loved the puff pastry, so I told her I would make her apple turnovers soon. Be on the lookout =)

Meaty Lasagna with Whole Wheat Noodles

Whole Wheat Noodles? Why the heck would anyone want to eat those things? Well, turns out they are not that bad. Dare I say that you can’t really even tell the difference. Seriously. My dad said it was the best lasagna he has ever had. EVER.

It doesn’t really even matter what kind of noodles you use. It is all about this meat sauce and cheese. My husband ate two helpings and raved about it. The next time you are craving lasagna, you should totally make this. Trust me.

Meaty Lasagna with Whole Wheat Noodles

Ingredients

1 onion, chopped
3 cloves garlic, minced
3/4 pound ground sirloin
3/4 pound ground Italian pork
1 tablespoon Italian Seasoning
1 teaspoon fennel seeds
3 tablespoons tomato paste
2 tablespoons Worcestershire Sauce
2 tablespoons sugar
1 28 oz. can of crushed tomatoes
1 14.5 oz. can diced tomatoes
1/4 cup red wine
1 cup beef stock
2 CUPS or more of shredded Italian cheese (I used a large bag from Publix on sale)
1 log mozzarella
salt and pepper to taste

Directions

Salt and pepper your meat. Brown all your meat about half way. Then add in the onions and garlic. Continue to brown.
Add in your Italian seasoning and stir well. Add in your tomato paste and cook for a few minutes.
Add in your wine. Reduce a bit, then add in your Worcestershire sauce, sugar, and beef stock. Mix well.
Then add all your tomatoes. Mix well and simmer for at least 30 more minutes (the longer the better).
Meanwhile, Cook your noodles so they are still under done, about 4 minutes less than the box says.
Cool your noodles just a tad so you don’t burn your fingers.
Spray a large casserole dish. Add a layer of sauce to the bottom. Then start layering your ingredients…pasta, sauce, shredded cheese, about 3 layers. On top, I added the mozzarella slices. Cook at 350 for about 45 minutes.
Serve with some crusty bread!

Friday Faves and Meal Planning 1/16/15

HAPPY FRIDAY!!!! So thankful for a 3 day weekend! I will be taking a moment on Monday to talk to the girls about the significance of the day and importance of such a great man and leader. It is not just a “day off” but a day to be thankful for one of the greatest men and inspirational leaders this country has ever seen. Our country is definitely not perfect, but I am hopeful that it will continue to improve everyday for ALL people who live in this great nation.

Since we do have a long weekend, I thought I would go ahead and make a meal plan for this week and go shopping after work. As promised, I do have a crockpot meal. I also want to challenge myself to make at least one new meal that requires a technique I have not done before. I know that this will be a tough challenge, but I want to push myself as a home cook. This week it is homemade empanadas.

Meal Plan 1/16/15

Sat- Meaty Lasagna- my parents took the girls tonight for a sleepover so I could have a Girls Night Out!!! So tomorrow I am making them dinner when they drop my sweet peas off.

Sun- Pork Empanadas- I am going to braise a pork loin in coke and soy sauce. Then I am going to make homemade dough. Then I am going to fill the dough with the meat and cheese. Jalapenos will be in some for the adults. The kids will get the mild ones.

Mon- Chicken Stir Fry with Chinese Noodles

Tues- Girls go to dinner with grandparents while I go to yoga and hubby goes to hockey. When I get home from yoga, I am making a “Mommy Meal”-  Something like risotto or a pasta of some sort…I bought some of those “fancy” mushrooms and wine, so we shall see =)

Wed- Crock pot Meal- Turkey Chili

Thurs- Leftover Night

Friday- Family Night Out!!!!! GREEK?????

Pesto Pasta with Corn and Pine Nuts

Hey kids! Hope you had a great Monday! My day was pretty awesome, and tonight is pretty chill at home. We had burger night; everyone gobbled up their burgers. As I was making dinner, I was thinking about what to take for lunch tomorrow. I am pretty good about taking my lunch to work, but sometimes I end up buying the school lunch. It is not bad, but I don’t like to take my chances. On the days I don’t bring my lunch, the salad bar is usually a safe bet. There is even the occasional gem like chicken wings or mozzarella sticks.

I was looking through the fridge and decided to make a pasta mash up. Basically, I took a bunch of ingredients that were separate and added them all together. In this case it was some leftover Annie’s mac and cheese, corn, leftover pesto, and pine nuts from said pesto. I have just enough for 2 servings…one for me and one for my lunch mate. We usually take turns making food for each other. Today she brought spicy tofu and veggies with coconut milk and noodles. It was delish!

This combo turned out really great! I hope you feel inspired to take a look at what you already have in your fridge or pantry and make it work!
