EASY and FAST Pandemic Meals

Here are a few meals I have made over the last few days. Hope they inspire you to cook at home!

Spaghetti and Meatballs but this time I just used frozen meatballs. No shame in that at all! Plus one of my favorites, mozzarella bruschetta. I sliced an Italian loaf of bread in medium sized pieces and slathered on olive oil on each piece and topped with a slice of fresh mozzarella. I put that in the oven on the second rack halfway through the pasta baking. It about 8-10. The oven was at 350.
I chopped up 3 tomatoes, some fresh basil, and mixed it with a tablespoon of olive oil and a tablespoon of balsamic glaze with a bit of salt and pepper. Topped the cheese toast with the tomato mixture and topped with more balsamic drizzle and basil.
Jambalaya- I made this for the hubby for his lunch. I sliced one chicken thigh and cooked it in a cast iron pan. Then I added 2 pieces of sliced Andouille sausages until they were heated through. Lastly I added the shrimp and cooked it for about 2 minutes per side. Then I added the meat to a cooked box of Jambalaya Rice mix. Pretty easy to throw together. I had a few bites to taste test 😉

Fridge, Freezer, Pantry Raid

Added Parm to the Shake and Bake with a tablespoon of pepper. Coated the pork chops and cooked in my cast iron in olive oil for about 4 minutes of each side on Med. High heat.
Let them rest for 5-10 minutes. Meanwhile, cook the frozen broccoli in a bit of olive oil. for about 5 minute. Then cook the the pasta in the same pan as the broccoli and follow directions on the pasta package.
Perfection.

Shhhh! Oven Baked Pork Chops and Rosemary Potatoes

We don’t eat pork chops very often in the Winkeljohn household. It’s just one of those foods that my husband is not a big fan of. He’s not a fan of pork chops, pot roast, or any kind of roast for that matter. It’s very strange to me, because I grew up in the south and pretty much pork chops and pot roast are like a go to meal. But the girls and I really love our pork chops, so occasionally I buy them anyway and I make him eat them 😂

The girls and I love to use Shake and Bake. No shame in the pork chop game 😉 I usually add some Parmesan and/or pecorino cheese to the packet to give it a little something extra. Tonight I did just that and threw in some chopped fresh rosemary I got from the Farmer’s Market.

I also cut up about 5 large red potatoes and slathered then in olive oil, salt, pepper, and rosemary. Then I placed them all of a sheet pan together. I place the tray in a 425 oven for about half and hour or until the Pork comes to about 145 degrees and the potatoes and fork tender.

Teriyaki Pork and Cauliflower

Rice is rice. Why not make it easier to cook? 

So I added the sauce to a pork tenderloin and a head of cauliflower. I cooked it in my braising dish. You could also do this in a sheet pan with a lip or a large cast iron pan. But this pan is my favorite right now and I am cooking everything in it 😉img_4920 I cooked it in the oven at 375 uncovered until the pork was 145 internally and the cauliflower was tender, about 40 minutes. Crockpot BBQ Pork

I could have sworn that I put this EASY recipe on the blog. Turns out it was just for chicken, but it is basically the same. It really is hard to call it a recipe, since I literally put a pork butt seasoned with salt, pepper, and onion powder in a crockpot covered with my favorite BBQ sauce all day. We used little sliders for our bread, and had mac and cheese and baked beans as a side. Clean plates all around the table!
